WIAW #3 ….On Thursday

This “What I Ate Wednesday” edition is actually “What I Ate Thursday” due to a very busy day yesterday.  Thursday is close enough to Wednesday, right?  😉

Breakfast

 

 

 

 

For breakfast I enjoyed (and I mean REALLY enjoyed!) a breakfast egg burrito made with one Flat Out whole wheat wrap, one Weight Watchers garlic and herb cheese wedge, and four scrambled eggwhites mixed with black pepper and hot sauce.  Delicious!  I had the second part of my breakfast mid-morning: one sliced banana sprinkled with cinnamon.

 

 

 

 

 

Lunch

 

 

 

 

 

Lunch consisted of a salad using up all of the veggies I had stashed in my fridge: a bed of spinach, carrots, yellow onions, red and green bell peppers, roasted brussel sprouts, and steamed broccoli.  I topped it with my current favorite salad dressing: Bolthouse Farms yogurt ranch dressing.  This dressing is delicious and has amazing stats: one serving has only 45 calories and 3 grams of fat.  It is also much lower in sodium than all of the other salad dressings currently in my fridge.

Dinner

 

 

 

 

 

Not to toot my own horn, but I must say that dinner was AMAZING!  I made meatball subs (“real” meatballs for my dad and brother and Morningstar veggie “meatballs” for my mom and me).  I served these with french-style green beans and fresh cantaloupe.

Snacks

My snacks throughout the day and this evening included:

1 honeycrisp apple (freshly picked from the orchard just a few days ago…um, SO GOOD!)
baby carrots with garlic and artichoke hummus
1 Dannon Light and Fit vanilla Greek yogurt with fresh strawberries and raspberries (I’ve said it before and I’ll say it again…you MUST try this.  It is like eating fruit dipped in frosting!)
