Meatball Marinara Subs

Many times when I make dinner I make two versions in order to please both the meat eaters in my family and myself.  This is really easy to do when making certain meals (tacos, spaghetti, etc.).  Tonight I made two versions of meatball subs using “real” meatballs and MorningStar veggie meatballs.  The MorningStar veggie meatballs were enjoyed by my mom and me, and when I say enjoyed, I mean ENJOYED.  These are delicious and tasted exactly like the real thing.  I guarantee if I had served this to my dad and brother that they would have never known it was not meat.  The MorningStar veggie meatballs are a great substitution to meatballs as they are lower in calories and fat, but are still high in protein.

 

 

 

 

 

Servings: 4-6 (if you use the whole package of hoagie buns)

Ingredients

1/2 small yellow onion, diced
“Real” meatballs or MorningStar veggie meatballs (you will need 4 meatballs per serving)
1 jar of traditional or marinara pasta sauce
pasta seasoning
whole wheat hoagie buns
part-skim mozzarella cheese slices

1. Preheat oven to 350 degrees F.

2. Combine frozen meatballs, pasta sauce, onions, and pasta seasoning in medium pan.  Heat over medium heat until sauce is bubbling.  Turn down heat to medium-low and continue heating until meatballs are cooked through.  I cooked mine approximately 25 minutes for the “real” meatballs and 20 minutes for the MorningStar meatballs.

3. Spread hoagie buns out onto a cookie sheet.  Top each bun with desired amount of cheese slices (you will need to fold these in order to fit them onto the buns).  Heat in the oven until the cheese is melted (approximately 3-5 minutes), being careful not to burn the buns.

4. Top each bun with 4 meatballs and extra sauce.

 

 

 

 

 

Super easy to make AND super delicious?  You bet!  Serve your sandwiches with your favorite vegetable and/or fruit.  Do I dare say that I actually prefer these over Subway’s version?  They are that good!
