What I Ate Wednesday

I have had a request to post a bit about what I eat on a daily basis.  In order to not overwhelm you (and me!) I have decided to do this weekly, for right now, and participate in “What I Ate Wednesday.”  Many food blogs dedicate their Wednesday posts to describing a “typical” day of food.

Breakfast:

 

 

 

 

 

 

I toasted 2 pieces of organic Ezekiel sprouted sesame bread (this bread is all natural, preservative free, vegan, and just all-around super healthy!).  On one piece I spread low sugar grape jelly.  On the other I used Better ‘N Peanut Butter all natural peanut butter (this stuff is SO yummy!) and a sprinkle of cinnamon.  I paired my toast with a side of fresh cantaloupe.  I have seriously been addicted to cantaloupe the past month.  It is deeeelicious!

I packed my trusty friend, the banana, for a mid morning snack at work.  This is a staple that I eat nearly every day, mid-morning.

For lunch I had leftovers from last night’s dinner: a taco salad…

 

 

 

 

 

 

I packed (and assembled at work): shredded lettuce, chopped onion, chopped green bell peppers, corn, tomatoes, fat free vegetarian refried beans, and medium Wholly Guacamole salsa.  This meal contained lots of veggies and protein all in one.  I also ate one of my favorite snacks: an apple.

My afternoon snack (after my much needed power nap) was a Kashi Honey Almond Flax granola bar.  I try not to eat these bars too often, but they are a yummy treat now and then.

Dinner: enchilada rice casserole topped w/ salsa and mixed vegetables (p.s. I love all vegetables, even canned vegetables!)

 

 

 

 

 

I will be posting the recipe for this casserole soon (hopefully tomorrow).

My after dinner snack was a big serving of baby carrots.  Anyone who knows me well knows that this is my all-time favorite vegetable!

My late night snack was a yummy strawberry Greek yogurt (mentioned in the last post) topped with fresh blueberries:

 

 

 

 

 

 

 

 
If I get hungry later I might snack on some lightly salted whole brown rice cakes spread with 1 Weight Watchers garlic and herb cheese wedge (think Laughing Cow cheese wedges)…we shall see!
