Happy Thanksgiving!!
I must say, my first vegetarian Thanksgiving was a huge success! I may have “missed out” on turkey, stuffing, and gravy, but I sure do not feel like I missed much! Following depicts “What I Ate…for Thanksgiving!”
The morning started out with a delicious pumpkin treat:
Two of the Happy Herbivore Maple-Kissed Pumpkin Muffins that I posted about yesterday. These muffins are vegan, perfectly moist, and amazingly pumpkiny
. Basically, they are really good! And did I mention, super easy to make? I paired them with a bowl of Greek vanilla yogurt and fresh blueberries. I also snacked on a banana mid-morning to give me fuel for cooking and to tied me over until our afternoon Thanksgiving meal.
On my family’s meal plan for this Thanksgiving:
For the Meat Eaters
Turkey
Mashed Potatoes and Gravy
Stuffing
A Jello Salad
For the Non-Meat Eaters (ME!)
Vegetarian Meatloaf
For Everyone
Fruit Salad
Green Bean Casserole
Twice-Baked Sweet Potatoes
Apple Sauce (a standard side to our meals)
Wheat and White Rolls
Pumpkin Pie with Whipped Topping

, I packed up some leftovers to take to my boyfriend, who unfortunately had to work. This is actually one of the first Thanksgivings in years that I have not had to work, for which I was very grateful. I let my belly rest a bit, and then finished off my first vegetarian Thanksgiving with my first taste (in years) of pumpkin pie.
I never used to like pumpkin pie or whipped topping, but since my eating habits have changed this past year, so have my taste buds. I am finding a new love for so many foods that I never thought/knew I liked. It makes meals fun!

Looks like a super successful and tasty Thanksgiving, that’s awesome and YUM! Twice baked sweet potatoes sound divineee! And I didn’t like pumpkin pie until recently either- maybe our taste buds are maturing haha
