It’s another What I Ate Wednesday day!  I am partway through my Colorado vacation, so we are keeping things short and sweet today.  Check out what I ate last Tuesday via my iPhone (because I was too lazy for anything else).

vega_green_smoothieThis particular Tuesday started off like nearly every other Tuesday: with a green smoothie!  In the mix was unsweetened coconut milk, cold water, chocolate Vega One, collagen peptides, half of a frozen banana, a tablespoon or two of frozen blueberries, a few slices of frozen zucchini, and tons of frozen spinach.  It was delicious, as usual.

baked_sweet_potatoI ate my second breakfast at work around 10:30.  It consisted of a pre-baked sweet potato topped off with sunflower seed butter.  I am currently super-duper obsessed with this combination for breakfast.

hot_dogs_as_a_bunLunch consisted of three parts all eaten within the time-frame of 1:00 to 3:00.  I started things off with two organic Applegate beef hot dogs (as a bun) topped with sauerkraut, dill relish, and yellow mustard.

brussel_sproutsOn the side I dug into a serving of cooked brussel sprouts seasoned with salt and pepper.

frozen_grapesWhen I was hungry again around 2:30, I ate the frozen grapes that I packed.  Frozen grapes honestly taste like candy to me.  They are perfect if you have a sweet tooth!

red_delicious_appleI ate an apple around 4:00 because I felt hungry and needed something to hold me over until dinner time.

wineDinner was extra fun for a week night because I met Erin at Jordan’s apartment to grill out for the evening.  We started things off with a bit of wine.  It was a tad sweet for my liking, but that did not stop me from having a small glass.

hilarys_eat_well_burgerAs we sat down with our wine, we also plated up our delicious grilled food.  I had a grilled veggie burger, grilled asparagus, and fresh strawberries.  It was crazy good.

plantain_chips_wholly_guacamoleOf course I could not end things there.  I had a craving on the brain when I drove home for my current favorite snack obsession: plantain chips dipped in guacamole.  I seriously love this combination.  You must try it if you have not already!

    Does the lack of carbs for n this diet bloat you? It is the one problem I have had with it. I can’t find a solution. Please share if you deal with it and have. Hope the remainder of your trip is awesome!

      I haven’t noticed it, but maybe it is because I’m used to the bloat anyways from eating so many veggies 😉

    I don’t know if it counts as a snack, but a japanese sweet potato (microwaved) and topped with raw coconut butter and cinnamon, eaten hot dog style 😉

    Love your sweet potato breakfast! Hope you are having an awesome time out here – I saw you were at Red Rocks last night (on IG). Joe and I recently saw a mountain lion sitting up on a rock there!

    OMG Plantain Chips and Guac sound so yummy! I’ll definitely have to try that sometime. Also, using the hot dogs as buns is total genius!

    I really need to buy or make plantain chips! My favorite snack lately has been Boulder chips. Not the healthiest, but filling and delicious. Hope CO is treating you well!!!

    I LOVE plantain chips! But my favorite snack is hands down toast with crunchy peanut butter and sliced banana. Nothing makes me happier!

      Brussels are crazy good! It’s so funny that I used to not like them 😉
