What I Ate Wednesday: June 3, 2015

in Other

It is the first What I Ate Wednesday post of June.  That’s right.  June.  How crazy is that?  I’m pretty excited that the sixth month of the year has arrived, because I have all sorts of fun things going on over the next 30 days.  Bring on the good times!

And bring on the good food…

What I Ate WednesdayWhat I Ate Wednesday: June 3, 2015

savory_breakfast_sandwichOn this particular day, I had the sweet and savory craving going on for breakfast.  I toasted up some gluten-free bread and made a breakfast sandwich with vegan cheese, an egg fried in coconut oil, strawberry jam, avocado, and a pinch of sea salt.  I ate it open-faced alongside some red grapes.  Has anyone ever wondered why they are called “red” grapes when they should really be called “purple/maroon” grapes?

chickpea_flour_breakfast_pizzaMy eggs craving continued into lunch time.  I made a chickpea flour breakfast pizza topped off with guacamole, salsa, scrambled eggs, green onions, and sriracha.  It was super filing and super delicious.

vega_one_green_smoothieAround 3:00 I drank a green smoothie with unsweetened coconut milk, water, chocolate Vega One protein powder (<– affiliate link), frozen banana, frozen cucumber, frozen blueberries, and frozen spinach.  It was so cold and icy… just the way I like it!

Marks_Bistro_carnitas_tacosThat evening, I met up with Joanna (and baby Everly), Erin, and Jordan for dinner at Mark’s Bistro in Dundee.  I ordered the gluten-free Carnitas Tacos, which were served alongside white rice and cumin black beans.  Everything was delicious, but I drank my smoothie a little too close to dinnertime so I was not super hungry.  I ate one of the tacos with the rice and beans and boxed up the rest.

Marks_Bistro_carnitas_tacosAfter over an hour and a half of talking and a 15-minute car ride home, I was hungry again.  I ate my other two tacos, which tasted just as good cold!

Kits_Organic_lemon_vanilla_chia_barI finished off my night with this new-to-me Kit’s Organic lemon vanilla + chia seeds bar.  I warmed it up in the microwave for 15 seconds and topped it off with a little crunchy almond butter.  It was the perfect late night snack!

Every single thing about this day was 100% delicious.  If I could repeat this day of eats weekly, I absolutely would.

What is your favorite way to cook and eat eggs?

  • Joanna @Makingmine June 3, 2015, 8:12 am

YUM! My fave are the tacos – I want to go back to Mark’s to order them! I ate the rest of my Mac & Cheese when I got home too 😉

    • ClnEatingVegGrl June 3, 2015, 8:36 am

Great minds think alike! And I’m glad you had tried them and told me they were good. I LOVED them!

  • Holly @ EatGreatBEGreat June 3, 2015, 8:16 am

Everything looks so delicious! My favorite way to eat eggs is over easy. Justin’s makes them so yummy! 🙂

    • ClnEatingVegGrl June 3, 2015, 8:37 am

Over easy eggs are definitely the best! I am always a little suspicious of people who say they don’t like their eggs cooked that way 😉

  • Kate June 3, 2015, 9:05 am

Everything looks so yummy- particularly your breakfast! I love the idea of warming the granola bar. In the past I’ve tried that with a Luna bar and it sparked and charred 🙁

    • ClnEatingVegGrl June 3, 2015, 12:40 pm

Oh my! That sounds scary! I say try it with Larabars or Kit bars 🙂

  • Rebecca @ Strength and Sunshine June 3, 2015, 9:24 am

The whole grape thing is like the blueberry thing :/
Have you had the Kit’s Organic Cashew bar? That one is the Bomb.com!

    • ClnEatingVegGrl June 3, 2015, 12:42 pm

YES! I think that one is the BEST flavor!

  • Miranda @ Miranda Writes Blog June 3, 2015, 9:59 am

That is one perfectly fried egg! Is it sad that I was really excited about that taco holder and now I want to get one for myself?

    • ClnEatingVegGrl June 3, 2015, 12:43 pm

Not sad at all! I have little plastic taco holders from the dollar section at Target that I LOVE!

I make eggs in a little pot called the Stonewave pot. Have you seen these? It’s a little pot that has a lid with a whole in it. It kind of looks like a mini tagine. It allow steam to cook the food. Any way I spray with cooking spray, pour in layer of egg whites and stuff it with as much baby spinach as I can, season and put lid on then microwave for 4 minutes. I come out as a molded souffle “thingy”. It slides right out and I eat with with toast, fruit preserves and more fresh fruit. it’s wonderfully light but the eggs make it filling too. http://stonewaverecipes.com/about/

    • ClnEatingVegGrl June 3, 2015, 12:45 pm

That sounds seriously awesome. Thanks so much for sharing! 🙂

  • Monica June 3, 2015, 10:59 am

please forgive my poor grammar in the previous comment–I had surgery recently and my right hand has decreased feeling. I can’t tell if the feel the keyboard key normally and thus miss letters, etc!

    • ClnEatingVegGrl June 3, 2015, 12:46 pm

And no worries at all! I hope your recovery goes well!

  • Audrey Kidwell June 3, 2015, 11:39 am

I love all this good food. I love being a vegetarian! I am so glad that you show we can eat more than just a salad!

    • ClnEatingVegGrl June 3, 2015, 12:54 pm

It pains me to not be a vegetarian right now due to health reasons, but I still LOVE eating veg-friendly food as often as possible and will continue to do so whenever I can. It is some of the most delicious food around!

  • Sarah @ Making Thyme for Health June 3, 2015, 12:41 pm

I’m not sure I have a favorite way to eat eggs but I’ve definitely grown less attracted to runny yolks. I know it’s really popular but I preferred them hard boiled, scrambled or over hard.

And those tacos looks so good but I have to admit, it’s so weird to see you eating pork! I’m happy that you are trying to new things to help yourself feel better but I always associated you as a fellow veggie so it’s definitely going to take some getting used to for me. 🙂

    • ClnEatingVegGrl June 3, 2015, 12:47 pm

I really like over hard eggs, too, so I definitely relate!

And yes.. it is still SO weird to buy, cook, and eat meat. SO weird. I just hope it pays off!

  • Julia @ Lord Still Loves Me June 3, 2015, 12:41 pm

I love the sweet + savory combo for breakfast! That sounds delicious, especially with the cheese! Question for you: why vegan cheese? I figured it must be due to the fact you’re a vegan, but there is an egg. Now you’ve piqued my curiosity!

Favorite way to cook eggs for me: scrambled with hot dogs probably!

    • ClnEatingVegGrl June 3, 2015, 12:50 pm

Haha! So confusing, right? I used to follow a mostly plant-based diet, but that has changed greatly over the past several months due to health reasons. BUT… I am still working my way through a lot of my vegan products. The cheese is one of them!

Also… scrambled eggs with hot dogs sounds crazy good!

  • Lauren Allen June 3, 2015, 2:32 pm

That breakfast pizza is SUCH a good idea! love it!

    • ClnEatingVegGrl June 3, 2015, 3:06 pm

It is the BEST! You definitely need to try it out!

  • Sabrina @NutritiouslySweet June 3, 2015, 3:42 pm

Oh my that breakfast sounds amazing! The only time I had a sweet and savory combo of that nature was a turkey sandwich with some jam and a cranberry raisin bread (with other fixings). You just reminded me how yummy it was!

    • ClnEatingVegGrl June 3, 2015, 4:18 pm

Ahh, sweet and savory is SO good! I just love it! You should definitely eat it more often 🙂

  • Nicole June 3, 2015, 6:34 pm

Your breakfast looks so amazing!!! Can you cook for me? lol

    • ClnEatingVegGrl June 3, 2015, 8:11 pm

      Sure, I’d love to!! 😉

  • Heather@hungryforbalance June 3, 2015, 7:42 pm

I love poached eggs, but I don’t make them often- they can be a pain.
    <3 tacos always!

    • ClnEatingVegGrl June 3, 2015, 8:13 pm

I have never trying making poached eggs myself, but I’d love to learn. They are delicious!

  • Liz @ I Heart Vegetables June 3, 2015, 8:48 pm

YUM! I need to try that chickpea flour breakfast pizza!

    • ClnEatingVegGrl June 4, 2015, 8:34 am

You seriously do. It’s a Hummusapien recipe and it is SO good!

  • GiGi Eats June 3, 2015, 9:49 pm

OOOO chickpea flour is soooo on my “TO USE” list for baking!

    • ClnEatingVegGrl June 4, 2015, 8:35 am

You most definitely NEED to! I love, love, love it!

  • Jessica @ Moxie and Mischief June 3, 2015, 9:53 pm

I am not a big fan of eggs, but all this looks great!

    • ClnEatingVegGrl June 4, 2015, 8:36 am

Bummer about the eggs, but at least you think everything else looks tasty 😉

  • Ariana June 4, 2015, 11:10 am

Ooo that looks like a delicious day of eating, for sure! I haven’t seen those Clif bars before – I’m going to keep an eye out for them because they sound yummy!

My favourite way to cook eggs is to steam them in a big bed of greens cooked in coconut oil! Deeelicious. That being said, it’s a little time-consuming and I don’t always have the time to do that. So scrambled it is!

    • ClnEatingVegGrl June 4, 2015, 8:23 pm

You can never go wrong with scrambled eggs!

And you MUST try those Kit bars if you can find them. They always have awesome ingredients and are super delish!

  • Kristy @ Southern In Law June 4, 2015, 9:34 pm

I now feel like I definitely need that little taco stand thingy in my life!

All of your eats look deeeeeeeelish! I love frittatas and eggs IN dishes – but I can’t eat them on their own!

    • ClnEatingVegGrl June 5, 2015, 7:32 am

How funny! I’m planning to make a frittata this weekend with my girlfriends. I hope it turns out good!
