It is the first What I Ate Wednesday post of June. That’s right. June. How crazy is that? I’m pretty excited that the sixth month of the year has arrived, because I have all sorts of fun things going on over the next 30 days. Bring on the good times!
And bring on the good food…
What I Ate Wednesday: June 3, 2015
On this particular day, I had the sweet and savory craving going on for breakfast. I toasted up some gluten-free bread and made a breakfast sandwich with vegan cheese, an egg fried in coconut oil, strawberry jam, avocado, and a pinch of sea salt. I ate it open-faced alongside some red grapes. Has anyone ever wondered why they are called “red” grapes when they should really be called “purple/maroon” grapes?
My eggs craving continued into lunch time. I made a chickpea flour breakfast pizza topped off with guacamole, salsa, scrambled eggs, green onions, and sriracha. It was super filing and super delicious.
Around 3:00 I drank a green smoothie with unsweetened coconut milk, water, chocolate Vega One protein powder (<– affiliate link), frozen banana, frozen cucumber, frozen blueberries, and frozen spinach. It was so cold and icy… just the way I like it!
That evening, I met up with Joanna (and baby Everly), Erin, and Jordan for dinner at Mark’s Bistro in Dundee. I ordered the gluten-free Carnitas Tacos, which were served alongside white rice and cumin black beans. Everything was delicious, but I drank my smoothie a little too close to dinnertime so I was not super hungry. I ate one of the tacos with the rice and beans and boxed up the rest.
After over an hour and a half of talking and a 15-minute car ride home, I was hungry again. I ate my other two tacos, which tasted just as good cold!
I finished off my night with this new-to-me Kit’s Organic lemon vanilla + chia seeds bar. I warmed it up in the microwave for 15 seconds and topped it off with a little crunchy almond butter. It was the perfect late night snack!
Every single thing about this day was 100% delicious. If I could repeat this day of eats weekly, I absolutely would.

Over easy eggs are definitely the best! I am always a little suspicious of people who say they don’t like their eggs cooked that way 😉
Everything looks so yummy- particularly your breakfast! I love the idea of warming the granola bar. In the past I’ve tried that with a Luna bar and it sparked and charred 🙁

That is one perfectly fried egg! Is it sad that I was really excited about that taco holder and now I want to get one for myself?
Not sad at all! I have little plastic taco holders from the dollar section at Target that I LOVE!
I make eggs in a little pot called the Stonewave pot. Have you seen these? It’s a little pot that has a lid with a whole in it. It kind of looks like a mini tagine. It allow steam to cook the food. Any way I spray with cooking spray, pour in layer of egg whites and stuff it with as much baby spinach as I can, season and put lid on then microwave for 4 minutes. I come out as a molded souffle “thingy”. It slides right out and I eat with with toast, fruit preserves and more fresh fruit. it’s wonderfully light but the eggs make it filling too. http://stonewaverecipes.com/about/

I love all this good food. I love being a vegetarian! I am so glad that you show we can eat more than just a salad!
It pains me to not be a vegetarian right now due to health reasons, but I still LOVE eating veg-friendly food as often as possible and will continue to do so whenever I can. It is some of the most delicious food around!
I’m not sure I have a favorite way to eat eggs but I’ve definitely grown less attracted to runny yolks. I know it’s really popular but I preferred them hard boiled, scrambled or over hard.
And those tacos looks so good but I have to admit, it’s so weird to see you eating pork! I’m happy that you are trying to new things to help yourself feel better but I always associated you as a fellow veggie so it’s definitely going to take some getting used to for me. 🙂

I love the sweet + savory combo for breakfast! That sounds delicious, especially with the cheese! Question for you: why vegan cheese? I figured it must be due to the fact you’re a vegan, but there is an egg. Now you’ve piqued my curiosity!

Haha! So confusing, right? I used to follow a mostly plant-based diet, but that has changed greatly over the past several months due to health reasons. BUT… I am still working my way through a lot of my vegan products. The cheese is one of them!
Also… scrambled eggs with hot dogs sounds crazy good!

Oh my that breakfast sounds amazing! The only time I had a sweet and savory combo of that nature was a turkey sandwich with some jam and a cranberry raisin bread (with other fixings). You just reminded me how yummy it was!

My favourite way to cook eggs is to steam them in a big bed of greens cooked in coconut oil! Deeelicious. That being said, it’s a little time-consuming and I don’t always have the time to do that. So scrambled it is!
You can never go wrong with scrambled eggs!
And you MUST try those Kit bars if you can find them. They always have awesome ingredients and are super delish!
