I hope you did not miss me too much last week! With my blogiversary celebration and giveaways, I did not quite have time to squeeze in a What I Ate Wednesday post. But lucky for you, I am back at it this week! I know that probably absolutely thrills you, right? 😉
I never really get tired of checking out others’ eats. It is fun to see what ends up on your plates and in your bowls because I almost always end up collecting at least one idea for my next week’s meal plan from other bloggers. I hope I can and am returning the favor to you! Let’s take a look at my most recent eats over the past week.
What I Ate Wednesday (Recent Eats)
I am so obsessed with these right now! Lindsay and Love Grown Foods sent me a Love Drop and I have been trying out all four of the flavors they offer for their new Power O’s cereal. I am thinking that the chocolate is probably my top pick!
An apple a day keeps the doctor away, right?
I made my Butternut Squash Lentil Loaf on Sunday and it has made four meals for me. I topped it with mustard because I kind of love it! I also served a slice of vegetable cornbread on the side (recipe to come).
Can’t stop, won’t stop. Blueberries are at their best right now!
When I am without my green smoothies, I always try to hunt down green juice or smoothies from restaurants.
Yeah, so remember when I was supposed to share that “chicken” nugget recipe with y’all? I still haven’t done it AND I made them again. I promise I will soon! I served mine with sundried tomato ketchup and a side of veggies.

A new-to-me product: a Dr. Praeger’s kale veggie burger dipped in barbecue sauce and served alongside mixed vegetables. I really enjoyed the burger and I also think it would be great on a salad.
And my egg salad obsession has continued…this time with veggies involved! I’ll be sharing this one tomorrow!

Oh that’s butternut squash lentil load sounds amazing. Will be checking out that recipe! I love blueberries right now they have been big and full of flavor. Hoping the batch I pick up tomorrow are still good. Thanks for sharing – looking forward to that “chicken” recipe 🙂

Blueberries are hard to find by me now at a good price so I am jealous! And yes, I am still waiting for the chicken nugget recipe and yes, Dr. Praeger’s burgers are great on salads. I always have them in the freezer!
This was my first time trying Dr. Praeger’s burgers. When I saw that they had kale in them I was instantly drawn in. That’s good marketing on their part! 😉
Ooo – I want to try that Love Grown Cereal! Whole Foods has it?
I have not checked Omaha’s for it yet, but they are supposed to be getting it at all Whole Foods I think. If not, I will be requesting it!
I love Dr Praegers veggie burgers. They are awesome. I love that kale blazer Naked Juice too.
We must have a thing for kale!! 😉
I tried tempeh for the first time and I liked it. It was prepared with a peanut butter dipping sauce. The recipe I followed had the tempeh fried in peanut oil though. I would prefer not to fry my food, but I didn’t realize that was a part of the recipe until I was too far into it. Note to self: read the instructions before beginning 🙂 But I’ll try it again, just prepared differently!

I’m not sure.. they are totally different so I guess it depends on what I am craving. Both are REALLY good! Also, the Dr. Praegger’s ones have toaster instructions on them too!

idk why it wasn’t before, but that butternut squash lentil loaf is totally bookmarked for squash season now! I’ve been eating a lot of avocado toast, eggs, and oats. no surprise there. I wish I was eating more quinoa?? that’s a weird one to crave but i’m all out at home and have been wanting to make some bowls with it.
I totally crave quinoa, so I do not think that is weird at all! It has honestly been a little while since I have eaten it as well, so I need to change that! And let me know when you try the lentil loaf. I love it, but I might be a bit biased 😉

Love the Dr Praggers veggie burgers. I wasn’t a big fan of the kale one, but I don’t love kale in general.
Kale is definitely one of those things you either love or dislike! I’m glad to hear the other burgers from that brand are good. I’ll have to try them out sometime!
