Guess what!? It’s Friday! Is anyone else as excited as I am about this? You are? Well, of course you are! Fridays are just great and glorious days. Sharing some of my favorite food blog finds from around the web is also pretty glorious, don’t you think? It seems as though it has been forever since I have shared with you some of my favorites, and that is probably because it has been! With my blogcation and Labor Day weekend, I have gone an entire month without a Friday Foodie Favorites post. I had better change that!
Friday Foodie Favorites: September 6, 2013
This absolutely delicious and flavorful soup was brought to you/inspired by Tara’s recipe for Chorizo Lentil Soup. I followed Tara’s recipe nearly exactly, but subbed in soyrizo in place of the chorizo. Trust me, you never would have been able to tell the difference. And let me just say…this is one recipe that I WILL be making again. The combination of the spicy soyrizo with the lentils, tomatoes, and potatoes was absolutely delicious. This is one flavorful soup. I served mine over cauliflower “rice” and probably could have eaten bowls and bowls of this soup if I hadn’t portioned them out ahead of time for the week ;).
Next up:
Now I am going to be honest. This doesn’t look all that pretty. But trust me, looks are most definitely deceiving in this instance. I made Christina’s Hummus and Lentil Wraps and loved every minute of my time spent eating them. I ended up cooking my spinach instead of leaving it raw and added in some red bell peppers that I had leftover in the fridge. These are super quick and easy to make, but are incredibly flavorful and make for the perfect dinner or lunch.

For dinner a couple of weekends ago I made a Polenta Pizza Crust. I topped my pizza crust with sauce, tomatoes, spinach, onions, mushrooms, and corn to make a Summertime-themed vegan pizza. Seriously, there is no need for cheese with toppings and a crust that are this delicious. The crust was definitely very fragile (you need to eat it with a fork), but tasty all the same. I will definitely be making this one again. Something this easy and delicious is always a keeper.
And finally…
This may be one of my most favorite meals that I have eaten over the past couple of weeks. I made Presley’s Sweet and Spicy Teriyaki Tofu and loved it! This is one VERY flavorful dish. I added coleslaw mix to mine (I had some leftover in my fridge) and it was a great addition. Otherwise, I followed Presley’s recipe to a tee. I ate my dish over whole brown rice and was left full and satisfied for hours. This dish also reheated beautifully the next day for lunch. Seriously folks, go make this!
