WIAW: April 3, 2013

Happy Wednesday!! 🙂

Am I the only one who gets super excited when Wednesday night arrives?  I know that most of us still have two work days left in the week, but I almost feel like I am home free at this point!  Come on Friday…get here soon!

Not only are Wednesdays great because they are so close to Thursdays and Fridays, but they are also great because it means that it is once again time for What I Ate Wednesday.

Breakfast

Today’s breakfast was a current favorite of mine: 2 pieces of toasted whole wheat bread smeared with half of an avocado and topped with salsa, nutritional yeast, and sea salt.

I also ate a bowl of Greek vanilla yogurt mixed with fresh strawberries and blackberries.

Mid-Morning Snack

At around 10:30 I ate a perfectly ripe banana.  I have been eating some good bananas lately!

Lunch

Today’s lunch consisted of leftovers from last night’s dinner: 2 Mushroom, Vegetable, and Hummus Stuffed Wraps (recipe to come!).  These wraps are darn good!  I also ate leftover roasted asparagus.  I have been seriously loving that asparagus is finally on sale in the grocery stores!

Before heading out for a bike ride, I snacked on a sliced Braeburn apple dipped in PB2 peanut butter.  I cannot get enough of that stuff!

Dinner

I whipped out an old favorite standby for tonight’s dinner: the “baked” (I microwaved it ;)) sweet potato!  I topped my potato with black beans, green salsa verde, a sunny-side up dippy egg, and nutritional yeast.  I also ate roasted broccoli and cauliflower on the side.

You cannot beat a good runny egg!

Snacks

Tonight’s snacks have/will consist of:

A vegetable plate of celery and carrots with hummus…

…fresh cantaloupe and red seedless grapes…

vegan week day 6 6

 

 

 

 

 

…and air-popped popcorn sprayed with olive oil spray and topped with sea salt, nutritional yeast, and a few dashes of curry powder.  I’d say I got in my fair share of nutritional yeast today! 😉
