My food obsessions and addictions tend to vary month to month, but one that has held true for the past several months has been grilled sandwiches. You may remember my post for The Best Homemade Grilled Cheese, or this post for a Grilled Peanut Butter and Jelly Sandwich. The most recent grilled sandwich that I have made is a Mexican-inspired take on The Best Homemade Grilled Cheese sandwich, and it certainly rivals the Grilled PB & J. I, however, cannot choose a favorite. I’ll leave that decision to you ;).
Mexican Grilled Cheese Sandwich
Servings: 1
Ingredients
EVOO cooking spray
2 pieces 100% whole wheat bread
1-2 TB coconut oil (you could also use butter or margarine)
1/4 cup fat-free vegetarian refried beans
white or yellow onion slices
1/2 a Roma tomato, cut into slices
1/2 an avocado, cut into slices
1 slice of part-skim Sharp Cheddar cheese (or other desired flavor)
salsa, optional
sour cream, optional
Directions
1. Spray a small skillet with EVOO cooking spray.
2. Spread one side of each slice of bread with coconut oil. You can use butter or margarine, but I highly recommend coconut oil as it is much healthier and it results in perfectly toasted, golden bread. Once you go with coconut oil, you’ll never go back!
3. Place one slice of bread (coconut oil side down) into the skillet. Top this slice of bread with refried beans, onion slices, tomato slices, and avocado.
4. Place one slice of cheese atop the avocado, and top the cheese with the remaining slice of bread (coconut oil side up).
5. Cook the sandwich for approximately 3-5 minutes, or until the bottom piece of bread becomes golden brown. Carefully flip the sandwich and cook the second side for 3-5 minutes, or until it has reached your desired crispness.
6. Serve with salsa and/or sour cream, if desired.
7. Cut your sandwich in half. In my own personal opinion, I believe that cutting it on a diagonal should be mandatory ;).
I recommend serving the Mexican Grilled Cheese Sandwich with a side of vegetables or fruit. I chose to serve mine with Roasted Dijon Broccoli and Cauliflower.
Yum, yum, yum! I love Mexican-inspired food and grilled cheese sandwiches, so this combination was delicious. This is a great high-protein lunch option, clocking in at around 18-20 grams of protein, depending on the specific ingredients that you use. High in protein and delicious?? Sign me up! 🙂
