Happy Wednesday and happy hump day! The work week is more than half way over. Cheers to that! 🙂
Now that we have established that the weekend will soon be here (as will my mama!), let’s get right to today’s good eats.
What I Ate Wednesday
Breakfast
This morning I ate two pieces of toasted organic sprouted whole grain Ezekiel bread that I topped with PB2 peanut butter and low-sugar grape jelly. This is one of my favorite ways to eat toast. Classic, but simple. Along with the toast, I ate scrambled egg whites with hot sauce, spinach, and nutritional yeast. This breakfast was not only delicious, but it packed in a whopping 30 grams of protein. Now that is a breakfast!
Lunch
My new co-workers invited me to a welcome lunch at one of my favorite chain restaurants: Ruby Tuesday. I did not feel comfortable taking pictures of my meal (I did not want to scare them away too quickly! ;)), so the camera stayed absent. I enjoyed one of their delicious garlic cheese biscuits before diving into my main course selection: spaghetti squash marinara with grilled zucchini. It was delicious!
Snack
Before heading to the gym after work, I had to get in my staple food for the day…a banana!
Dinner
Tonight’s dinner consisted of leftover Thai coconut curry (from The Happy Herbivore Abroad cookbook) to which I added fresh spinach and served over whole brown rice.

It looks delicious, right? Well, it definitely was. And I was surprised to find that I actually thought it tasted better as leftovers. That rarely happens!
I paired this spicy dish with a sweet Braeburn apple. It was a great balance between the two.
Snacks
Tonight’s snacks consisted of cooked frozen peas and carrots, carrots with spicy red pepper hummus, and Greek vanilla yogurt with fresh blueberries.
All in all, it was a great day of healthy eats!
