I have had a package of whole wheat white tortillas on hand for over a month now that I decided I just had to put to use! On the original menu for today? Refried Bean Burritos. What did I actually eat? Refried Bean Baked Quesadillas. As sometimes happens, my meal did not turn out as expected. However, it just may have been better than the original plan!
Refried Bean Baked Quesadillas

Ingredients
EVOO cooking spray
2 whole wheat tortillas (I used smaller ones as opposed to the GIANT tortillas)
1/2 cup fat-free, vegetarian refried beans
1/4 cup yellow onion, diced
2 TB salsa
1/4 cup shredded cheese of choice (I used Daiya mozzarella “cheese” to make it vegan)
1/2 avocado, mashed
Directions
1. Preheat oven to 425 degrees F. Spray a baking sheet with EVOO cooking spray.
2. Place 2 tortillas onto the baking sheet. Top each tortilla with refried beans, onion, and salsa.
3. Add shredded cheese (or Daiya) to each tortilla. Bake for approximately 6-8 minutes, or until the tortillas begin to get slightly brown and crispy and until the cheese is melted (the vegan Daiya cheese does not melt as well as dairy cheese).
4. Top each tortilla with avocado.
5. Gently fold the tortillas in half. Each tortilla will be slightly crispy and the edges of my tortillas broke a bit, but as long as you have not baked them too long they will fold into the form of quesadillas.
Mmmm! Just look at that yummy filling inside of that crispy tortilla. I had originally planned on rolling the tortillas into burritos, but the tortillas got too crispy and instead worked better folded in half. I went with it and I was so glad that I did! This was a good mishap in the kitchen! I would serve this as a meal, or make one as a snack.
I’ve said it before and I’ll say it again….who says eating vegan can’t be absolutely delicious? 🙂
