WIAW: November 21, 2012 + A Last-Minute Thanksgiving Breakfast Recipe

With the Thanksgiving holiday tomorrow and a very busy day/week in progress, this week’s “What I Ate Wednesday” post is going to be a bit different.  Rather than documenting what I eat today (there is literally no spare time in my day today to do this! 🙁 ), I will highlight a few of my favorite meals that I have eaten in the past few days.  And man, let me tell you…there have been some good eats!

 

 

 

 

 

 

 

Breakfast

 

 

 

 

 

 

Breakfast on Monday was an absolutely delicious wafflewich!  I stuffed one sunny-side up egg w/ black pepper, avocado slices, and salsa between two toasted Kashi whole grain waffles.

 

 

 

 

 

 

Isn’t she a pretty little thing?  And oh, so yummy and healthy!

 

 

 

 

 

 

I paired my wafflewich sandwich creation with a bowl of Greek vanilla yogurt topped with fresh blueberries.  I seriously cannot get over how delicious and satisfying this breakfast was.  It definitely hit the spot.

Lunch

 

 

 

 

 

 

Monday’s lunch may have been even more delicious than Monday’s breakfast.  I prepared Roasted Eggplant, Tomato, and Feta Cheese Stacks.  So stinkin’ good!!  Don’t worry…I will be posting this recipe soon 🙂 .

Dinner

 

 

 

 

 

 

Tuesday night’s dinner was another recipe from The Happy Herbivore: Fire-Roasted Chana Masala.  I followed the recipe exactly, except I tossed in some chopped spinach to make the dish a bit thicker and healthier.  I served the chana masala over a bed of whole brown rice.

 

 

 

 

 

 

All mixed together.

Snacks

Recent snacks have been the usual.  Things like carrots with hummus, apples, fresh fruit, nuts, and a new favorite of mine: lightly salted whole brown rice cakes topped with a Weight Watchers (or Laughing Cow) garlic and herb cheese wedge and blackberry jam or grape jelly.  So good!!
