Happy Wednesday!! We are more than half-way through the week and almost half-way through the month of November. Seriously, where has the time gone? I cannot believe that it is almost December! But instead of focusing on how fast time is flying by, lets focus on the fact that it is Wednesday. That’s right. It is time for another edition of “What I Ate Wednesday.”
Breakfast
Today’s breakfast was a hearty meal consisting of 2 pieces of 100% whole wheat toast- 1 spread with natural almond butter and sprinkled with cinnamon and 1 slathered with delicious pumpkin butter- and scrambled egg whites cooked with hot sauce, onions, and spinach and topped with green salsa. Tasty!
Mid-Morning Snack

Lunch
I stole an idea from Brittany’s blog and topped a baked sweet potato with vegetarian baked beans. On the side I had steamed broccoli and cauliflower sprinkled with sea salt and Trader Joe’s 21 Seasoning Salute.
Dinner
Tonight’s dinner was centered around Mini Mexican Pizzas (tostados) with corn. I, of course, went back for seconds! 😉 Look for the recipe for these tasty Mexican-inspired pizzas on the blog soon!
Snacks
Snacks throughout this afternoon and evening included/will include:
Trader Joe’s whole natural almonds
1 Greek vanilla yogurt with fresh raspberries and blueberries
…and some sort of crunchy/salty snack? Pop corn? Pop Chips? Lentil Chips? We shall see!
