By now, you are probably more than aware of my love for sweet potatoes. I like them sautéed, mashed, baked, roasted, as french fries, etc., etc., etc. Basically, they are just plain good! When I saw a recipe for sweet potato hash on Ashlee’s blog , my eyes and my stomach were both instantly intrigued. A sweet and savory dish centering around sweet potatoes, apples, and vegan sausage? Sign me up!
Sweet Potato and “Sausage” Hash
Slightly adapted from Ashlee’s recipe.
Servings: 2
Ingredients
water
1 clove of garlic, minced
1/2 small yellow onion, diced
1 apple, chopped (I used a Jonagold)
1 medium sweet potato, peeled and chopped
1 vegan sausage link,* cut into half-inch rounds
1/4 tsp of cinnamon
1/2 tsp of dried rosemary
1/4 tsp of dried sweet basil
1/4 tsp of dried thyme
salt, to taste
black pepper, to taste
EVOO cooking spray
2 cups of fresh baby spinach
*Per Ashlee’s recommendation, I purchased Field Roast’s brand of vegan sausage in the smoked apple sage flavor. I was beyond impressed with this “sausage.” The ingredients are fabulous (it is soy free), the nutritional facts impressed me with 13 grams of protein per serving, and the taste was unbelievable. If I was not aware that the “sausage” was vegan, I would have sworn that it was the real thing.

Directions
1. Line a saute pan with a thin layer of water and heat over medium-high heat until hot.
2. Lower heat to medium and add garlic, onions, apples, sweet potatoes, and sausage. Stir to combine.
3. Add seasonings to the mix, spray with EVOO cooking spray, stir, and cook for approximately 17-20 minutes, or until the sweet potatoes and apples are fork-tender. You will need to add additional water (a few tablespoons at a time) and EVOO cooking spray when the pan begins to get dry.
4. Once the sweet potatoes and apples are cooked, add spinach. Cook for an additional 2-3 minutes, or until the spinach is wilted.
I served the Sweet Potato and “Sausage” Hash alongside roasted fresh green beans (recipe to follow). This meal was very nutrient-rich and hit the major food groups of vegetables, fruits, and carbs. Seriously, go make this. I cannot stop thinking about this dish (especially the sausage!) and cannot wait to eat my leftovers tomorrow 🙂 .
Roasted Green Beans
Ingredients
fresh green beans, washed and the ends chopped
EVOO cooking spray
black pepper, a few sprinkles
fine sea salt, a few sprinkles
garlic powder, a few sprinkles
onion powder, a few sprinkles
Trader Joe’s 21 Seasoning Salute, a few sprinkles (optional)
Sorry, no measurements again!
Directions
1. Preheat oven to 415 degrees F. Spray a baking sheet with EVOO cooking spray.
2. Place green beans onto baking sheet. Spray with a hefty amount of EVOO cooking spray. Sprinkle with seasonings.
3. Roast for 17-20 minutes, shaking the pan halfway through. Spray with additional EVOO cooking spray, if needed.
