Tonight I cooked for three people: me, myself, and I 🙂 . I love cooking for other people, especially my boyfriend and my family, but sometimes it is nice to prepare a meal just for myself. It allows me to make adventurous food choices and try new recipes that my family members may not be so keen on trying. Plus, it generally means I will have some sort of leftovers to eat within the week. I am a big fan of leftovers! Tonight I fixed a vegan dish from the cookbook, Everyday Happy Herbivore. I have mentioned this vegan cookbook before and I cannot recommend it any more. I selected the recipe for Sweet Potato Dal and was oh, so very pleased with the results!

The ingredients used include: sweet potatoes, onions, garlic, red pepper flakes, turmeric, garam masala (yes, I finally found some!), vegetable broth, dried red lentils, spinach, and salt.
This recipe is vegan, nearly fat-free, gluten-free, soy-free, and contains about 15 grams of protein. Quite impressive! 🙂 Plus, it is absolutely delicious. Every time that I cook a meal from this cookbook I am more and more impressed. Go buy the cookbook and/or make this meal! I promise, you will not be sorry.
