It is time for the final edition of “What I Ate Wednesday” for the month of October. P.s. I cannot believe that it is November already…time flies!
Breakfast
Breakfast on Wednesday consisted of scrambled egg whites topped with green salsa, fresh-cut cantaloupe, and one slice of toasted Trader Joe’s sprouted 7-grain bread topped with natural peanut butter, pumpkin butter, and a dash of cinnamon. If you have not tried pumpkin butter, let me introduce you to this:
Trader Joe’s Pumpkin Butter. It is so stinkin’ good and totally in the spirit for this season!
I ate my traditional go-to mid-morning snack: a banana.
Lunch
Lunch consisted of a “BLT” made with 100% whole wheat toast, MorningStar Farms veggie “bacon” strips, tomatoes, lettuce, and dijon mustard. The “bacon” looks odd, yes, but it is so crispy and delicious. I never even liked BLT sandwiches when I ate meat, but I am loving them now! I also had a serving of low-fat cottage cheese on the side.
Dinner
Dinner was a big bowl full of Vegetarian Tortilla Soup (the recipe can be found on my previous post!) topped with shredded Velveeta queso blanco cheese and Hy-Vee Sante Fe tortilla strips. So warm, spicy, and delicious!
On the side I had a bowl of steamed cauliflower and broccoli seasoned with sea salt and Trader Joe’s 21 Seasoning Salute. I am really loving steamed vegetables lately.
Snacks
My snacks throughout the afternoon and evening consisted of:
1 Fuji apple
1 Kashi peanut peanut butter bar
1 light vanilla Greek yogurt with fresh strawberries
Lentil chips- a mixture of Jalapeno and Dill & Sour Cream
It was a tasty day of eats!
On a side note, today is November 1st…aka World Vegan Day. I will be celebrating by eating vegan today. I challenge you to incorporate a vegan day into your diet sometime this week.
