I must be craving pizza badly because I have been on a major “pizza” kick lately. Today I created another pizza-inspired meal- this time, for lunch!
Pizza Toasters
Servings: 1
Ingredients
2 pieces of 100% whole wheat bread (I used Ezekiel’s brand)
1/4 cup to 1/2 cup of pizza sauce
1 cup of fresh spinach, chopped
2 TB of nutritional yeast OR shredded part-skim cheese
pizza seasoning
any additional toppings of your choice
Directions
1. Wilt spinach by steaming it in the microwave for about 1-2 minutes. Prepare any additional toppings that you are using.
2. Toast 2 pieces of bread.
3. Heat pizza sauce in microwave for approximately 30 seconds.
4. Top each piece of toast with pizza sauce, spinach, optional additional toppings, nutritional yeast or cheese, and pizza seasoning.
These are beyond easy to make, are protein-rich, and taste delicious! They are definitely the perfect snack, or they can be quickly assembled for the start of a light meal.
Today, I served my pizza toasters alongside steamed broccoli and cauliflower seasoned with sea salt and Trader Joe’s 21 Seasoning Salute. Yum!!
