Keeping this recipe in mind, there really are no excuses for not preparing a healthy lunch or dinner. This soup takes only 5 minutes to make, it is chocked full of nutritious vegetables, it is low in calories, and most importantly…it tastes delicious. What makes this recipe even better, is that it enables you to prepare a single-serving of soup for those times when you do not need to feed 6 people or do not need leftovers. You could also prepare this soup the night before and take it with you for your lunch break at work.
(I apologize in advance for the not so great pictures. It turns out that it is quite difficult to get a good picture when the soup is HOT and steaming.)
Single-Serving Vegetable Soup

Ingredients
1 cup of frozen mixed vegetables
1/4 cup of frozen shelled edamame
1 cup of water*
1 tsp Better Than Bouillon vegetable base*
1/4 to 1/2 tsp of Italian seasoning (to your liking)
hot sauce, to taste (I used about 5 dashes)
*You can substitute 1 cup of vegetable broth in place of the water and vegetable base.
Directions
This may be the easiest set of directions that I will ever write 🙂 :
1. Combine all ingredients in a small sauce pan and boil until the vegetables are heated through.
2. Allow to cool and eat!
This soup is pretty high in protein as compared to other vegetarian soups due to the vegetables, specifically the edamame (Which, if you have never tried it you really should. It is delicious!).
I served my soup with whole grain saltine crackers and a side of steamed broccoli. This is one of the simplest “from scratch” meals that I have cooked, and it made for an incredibly satisfying lunch!
