Just a warning, you MUST like squash in order to enjoy this recipe! Soo….I’d say it is a good thing that I just so happen to love squash! 🙂
This recipe, which yields approximately 4 servings, was inspired by and adapted from a recipe found on the blog: Clean Food Creative Fitness (http://www.cleanfoodcreativefitness.com/the-easiest-bowl-of-gluten-free-paleo-pasta-youll-ever-make/).
Ingredients
2 medium zucchini
2 medium yellow squash
1 package of sliced mushrooms, chopped smaller if desired
2 cups of fresh spinach, chopped
1/2 yellow onion, diced
EVOO cooking spray
2 15 ounce cans of crushed tomatoes
1 small can of tomato paste
1 tsp Italian seasoning
pizza/pasta seasoning
sweet basil seasoning OR fresh basil
ground oregano
parsley flakes seasoning OR fresh parsley
black pepper
1. Cut zucchini and yellow squash into “pasta-like” strips.
2. Chop spinach, onions, and mushrooms to desired size.
3. Spray large pan with EVOO cooking spray. Saute zucchini, squash, onions, mushrooms, and spinach over medium heat for approximately 10 minutes, or until the vegetables are tender and the spinach is wilted.
4. Add crushed tomatoes, tomato paste, and seasonings (I did not measure my seasonings, but instead added them based on taste).
5. Continue cooking over medium-low heat for 10 minutes.
I found that you will need a lot of seasoning in order to make your sauce flavorful. Next time, I may try using a low-sodium jarred pasta sauce. Either way, this is an easy meal to prepare that is chocked full of veggies! There are no excuses to not get your vegetables in for the day with this meal! 😉
Oh, and on an exciting note….for those who know me well you may have been wondering….mushrooms?? I have been known to have a fear of mushrooms, but with my new vegetarian diet I am trying to branch out and try, well…pretty much anything! The verdict? I did not even notice they were in there! 😉
