The 13th of May, eh? Could it be that we are seriously almost halfway through May? Let me tell you, this year is faallyyying by. On the one hand, I am excited because that means June will be here soon. I have a lot of fun things planned for next month. On the other hand, it scares me a bit. At this rate, summer will come and go quicker than we can bat an eye. Since the months of June through October are generally my favorites (except Christmas, of course), I want things to slow down just a wee bit.
One thing that I do not want to slow down, though, is the rate at which I have been making and eating delicious food. Let’s check out what I scarfed down this past Saturday.
What I Ate Wednesday: May 13, 2015
I had a little bit of a difficult time deciding what I wanted for breakfast on Saturday morning. I was craving a breakfast sandwich, an apple with almond butter, and peas. Random, I know. I had plans to go to a Pilates Fusion class at Sweat Cycle and Soul, so I decided I had better not have such a filling breakfast. Instead, I rolled with the thing I was craving the most: the breakfast sandwich! I toasted up the last of my gluten-free bread and topped it with vegan Field Roast Chao cheese and a fried egg. It was the perfect fuel for my workout.
Even after a great workout, I still could not shake the pea craving. So that is exactly what I had when I got home… along with a ton of water.
I then snacked on a few cracker creations that I whipped up for a future blog post. It’s really a fun process. I create. I photograph. I eat. I think the eating part might be my favorite!
I decided I better actually eat something substantial for lunch. I chose one of my current obsessions: canned tuna in split pea soup. This time, however, I served it with rice cakes instead of over toast since I was out of GF bread. This was good, but it is definitely much tastier over toast.
I needed a little something to tide me over between lunch and dinner. I decided on my favorite weekend afternoon snack: a green smoothie! In the mix was unsweetened vanilla almond milk, cold water, chocolate Vega One <–affiliate link, frozen banana, frozen pineapple, frozen zucchini, frozen kale, and fresh spinach. I promise, it surprisingly did not even taste healthy!
I spent my Saturday night with some of my favorite people: Erin and Jordan. We started our evening out with some wine, crackers, and cheese.
Then it was time for dinner! I ate a grilled Hillary’s veggie burger, fresh cantaloupe, and roasted brussel sprouts. Everything was so good. I may or may not have followed up my first glass of wine with a couple more, too.
After dinner, we decided that S’mores were a must since it is practically summertime. Do you like my GF version?
I arrived back to my apartment around 9:30. I felt tired, but also hungry. I sliced up an apple, microwaved it for about 45 seconds, and topped it with ground cinnamon. It turns out that I was not as hungry as I thought I was. I ate about half of this and then decided I was full and ready for bed.
This was a totally random, slightly snacky day full of tons of “mini meals” spread throughout. I loved every second and every bite of it.

Those Hilary’s eat well burgers are the BEST! We love ours topped with a little avocado and salsa 🙂 They’re so crispy even just being baked in the oven!

Oh trust me, I eat my fair share of meals out of Tupperware too! My lunches at work never look pretty 😉

Yes!! It was my friend Erin’s idea to add bananas to S’mores. They all made regular ones with the banana and I just left the graham crackers off. It was a taaaasty combination!
If summer goes by fast…I am going to cry and scream and kick! Ah!

I do the microwave apple trick, too, diced with a little water and cinnamon added, and then top it with a spoonful of vanilla ice cream. Yum!
Oh my goodness, I bet the addition of vanilla ice cream makes it CRAZY good. I’ll have to try that with some coconut milk ice cream!
Love the s’more idea. We also buy softer GF cookies to use as s’more lids. 🙂

Hi Hannah! As a veggie lover, do you know that peas are completely not desirable to me at all? I like all veggies except peas and lima beans ahaha. And yet, you basically had them twice in this day. Love that you had some nibblies throughout the day. I like to snack too, and a microwaved apple? Okay, I’ve now seen this a lot and never tried it. I need to! Happy WIAW! 🙂

OMG I don’t even know the last time I ever had a S’MORE! ha! I don’t even think I liked them very much, I think I remember liking all of the ingredients separately, just not together – ha!
HAHA! Hey, I’m a big fan of deconstructed foods, so you could just eat them separately and call it a deconstructed s’more 😉
