Christmas Eve is upon us! This is definitely one of my top five days of the year, as far as holidays go. Today’s plans include meal prepping for tomorrow, baking a vegan chocolate pie and cookies, relaxing, spending time with my family, and Christmas dinner with Jeremy’s mom’s side of the family. It is sure to be a busy, but glorious, day.
In the spirit of all things Christmas, let’s keep things short and sweet. After all, blogging has very little to do with Christmas! I’m linking up with Jenn from Peas and Crayons for a look at a day of my mostly plant-based eats.
What I Ate Wednesday: December 24, 2014
Breakfast was an everything bagel (the best) topped with Go Veggie! chive and garlic vegan cream cheese. On the side, I ate a sunny-side up egg.
Lunch was a lentil sloppy joe (with extra veggies thrown in) on toasted Ezekiel bread with lettuce and yellow mustard.
On the side I ate steamed brussel sprouts topped with Trader Joe’s 21 Seasoning Salute.
Afternoon snack #1: a green smoothie with unsweetened almond milk, vanilla Vega One, frozen banana, frozen blueberries, frozen zucchini, and tons of fresh spinach.
Afternoon snack #2: a sliced fuji apple.
Robyn’s Lemony Ginger Red Lentils were on the dinner menu for the night. I served them over cauliflower rice. This is a favorite of mine that I have probably made at least five times.
Even though it is the Christmas season, I have still be enjoying pumpkin beer. I am a believer that pumpkin should be in our lives year round.
My before bed snack consisted of this popcorn, which is my absolute favorite vegan popcorn!
I balanced the saltiness of the popcorn with these super sweet organic raspberries. They were so good and literally tasted like candy!
There is a full day of mostly plant-based eats for ya! I hope you have a wonderful Christmas Eve spent with those you love 🙂
