I know, right? It is definitely one of my favorite flavors. My co-worker made me vegan carrot cake cupcakes for my birthday this year and they were SO awesome.

What a great recipe! Definitely a keep for breakfast. I love having things that I can make ahead of time and grab and go in the morning!
I know, right? Making my breakfasts on the weekend has been a HUGE time-saver for me, especially now that I have started getting a lot of my workouts in in the morning. My co-workers all yell at me though when I heat this up and make the room smell like pumpkin :).
