Happy Friday!! We have almost made it to the end of the week! And in celebration, let’s take a look at some seriously good eats that I have discovered (and tried!) around the web.
A couple of weeks ago I tried Mama Pea’s Cauliflower “Rice” Paella. I forget who recommended this dish to me, but it certainly comes as no surprise since it is centered around cauliflower “rice” ;). I subbed in black olives for the Spanish olives, but other than that I follow the recipe exactly. My pictures certainly don’t look as pretty as Mama Pea’s, but this dish definitely tasted good! And can I just say that I love that it contains peas? Yes, peas are another one of my obsessions.
Several Sundays ago, I cooked up a batch of Alysia’s Crockpot Applesauce. I used agave nectar in place of the honey in order to make it vegan. This recipe was SO easy and resulted in the most delicious chunky-style applesauce. I instantly fell in love with this at first bite. I ate it for snacks and I even topped pancakes with it. I will definitely be making this again, especially after I visit a local apple orchard.
Last week I made the Food Babe’s Kale Tacos for dinner. I finally tried kale for the first time about six months ago and I have been hooked ever since. Who knew that kale could be the star ingredient of tacos? Trust me when I say that it most definitely can be. These were super tasty. Plus, it didn’t hurt that I topped them off with avocado and some sriracha sauce ;).
The minute that I saw Dixya’s recipe for Vegetable Pancakes, I knew these were made for me. I love vegetables and I love pancakes, so why not combine the concept? I have always been a fan of potato pancakes, but I was absolutely loving this healthier and greener vegetable recipe. I topped my pancakes off with some Tofutti herb and chive vegan cream cheese and some sriracha sauce. They were SO good!
And finally…
I made Robyn’s Tempeh “Chicken” Salad” for a quick and easy meal. Tempeh and I are pretty much best friends right now, so this recipe totally spoke to me. For dinner, I served it over a bed of lettuce.
I served the rest of my batch on rice cakes as a part of my lunch the next day at work. I can’t decide which way I liked it better. That is probably because it was so stinkin’ delicious! I also absolutely ate some of it all by itself because I couldn’t keep my spoon out of the bowl ;). This is definitely a must make.
