What I Ate Wednesday Tuesday: August 7, 2013
Breakfast
Yesterday’s breakfast was a baked sweet potato topped with PB2 peanut butter. This is SO delicious and is one of my favorite breakfasts right now!
I also paired it with:
Fresh mango, strawberries, and blackberries. I am loving how delicious all of the Summertime fruit is right now!
Mid-Morning Snack
A perfectly ripe banana.
Lunch
Lunch was leftovers from a big batch of Slow-Cooker Pea and Carrot Rice Soup that I made over the weekend. I followed my recipe exactly but added in some green beans this time. I served my soup over leftover cauliflower “rice” to make it extra thick.
I also ate a Red Delicious apple.
Afternoon Snack
On my way to the gym I snacked on a PB & J Larabar…the best flavor ever!
Dinner
Last night’s dinner was the Happy Herbivore’s Caribbean Peas and Rice. I followed the recipe exactly, but added in some leftover mushrooms and tomatoes, and I replaced the rice with cauliflower “rice.” This was taaaasty!
Evening Snacks
Evening snacks included roasted turnip fries with mustard…
…fresh cantaloupe and grapes…
…and Annie’s Sea Salt Popcorn (I forgot to take a pic! :().
It was a darn tasty day of eats! Have a great Wednesday everyone. Go eat some delicious and healthy food :).

Your breakfast looks fab! I had some roasted squash with peanut butter and cottage cheese as part of dinner the other day and couldn’t get over how delicious the combo was!

I’ve never tried sweet potato and PB. I’m still sticking to the savory versions of sweet potatoes! That soup looks really good!

Mmm i’ve been munching on popcorn a lot more as a snack recently, too! Weird since it’s not something I usually go for, but it’s definitely made an appearance more than once in the past week! Oh well…rolling with it 😛
I LOVE popcorn! I am definitely going to make some in my air-popped tonight and top it with tons of nutritional yeast :).
I almost picked up that popcorn the other day…is it good?? And that soup looks fabulous!

And that popcorn is the best, I buy the big a$$ bags from Costco.. Probably not good for my portion control.. 🙂
Haha, I hear ya. I always portion out my serving otherwise I would eat about half of the bag in one sitting.
I STILL need to try a sweet potato for breakfast!! I’m loving all the fruit right now too! The berries? Oh my, to die for! And I forgot about mango… How could I?! It’s one of my favorite fruits! Thanks for the reminder 🙂

It is perfect soup weather. But then again, I am one who thinks that all weather is perfect soup weather ;).
I’ve never thought to bake a sweet potato much less put pb2 on top! That seriously is going to happen in my kitchen soon! And those grapes! They’ve become my favorite snack! So juicy and tasty!

I love how sweet potatoes literally work at any point in the day, including breakfast! And now I wish I had some soup for lunch, yours looks awesome!
Maybe that is why sweet potatoes are one of my favorite foods. They are SUPER versatile!
Mmmm I love the PB&J Larabars. Have you tried the Banana Bread flavor? It’s so good – tastes just like the real thing! Your fruit from breakfast looks delicious and so fresh.
I have not tried that flavor yet (surprisingly), but I really want to!
I’m reading your post and going through your comments and surprised to see all the different Larabar flavors! The most adventurous one I tried was Apple Pie. Where can I get PB&J?!
