WIAW: July 17, 2013

in Other

Who is ready for another round of What I Ate Wednesday Tuesday?  No, you aren’t?  Well…too bad!

Oh, and watch out because I totally went against my usual “mid-morning” snack (gasp!).  You better read on to find out all about it ;).

What I Ate Wednesday: July 17, 2013

Breakfast

WIAW 71013 2

Yes, this is a recycled picture, but I didn’t exactly think that it would be appropriate for me to take a picture of my breakfast while at work ;).  You get the gist, though: a baked sweet potato topped with peanut butter and cinnamon.  YUM!

I finished off my breakfast with a sliced white nectarine.

Mid-Morning

WIAW 71713 2

Now here is where things get interesting.  I know that most of you are probably pretty used to seeing a picture of a banana for my mid-morning snack.  But yesterday, I got a little crazy and ate some veggies instead.  In the bowl were radish slices, tomatoes, and roasted buttercup squash.  It was actually kind of a nice change up.  But don’t worry, I am not getting rid of the banana forever.

Lunch

friday favorite 2 bean chili 2y

Yesterday’s lunch consisted of leftovers from Monday night’s dinner.  It was a delicious vegetable and bean chili soup.  I will be posting more on this in a future Friday Favorites post :).

WIAW 71713 3

I also at a Golden Delicious apple.  So yellow and pretty!

Afternoon Snack

WIAW 71713 4

On my way to the gym after work, I snacked on a cashew Kit’s Organic Fruit + Nut Bar.  I love these bars!  Not only are they delicious, but this particular variety only contains 4 ingredients: organic dates, organic cashews, organic, almonds, and sea salt.  You can’t beat that!

Dinner

mock tuna salad 4

Last night’s dinner consisted of a mock “tuna” salad sandwich from the Happy Herbivore on whole wheat toast with fresh spinach and onions (YUM!), a dill pickle spear, and my roasted turnip french fries dipped in ketchup and mustard.  It was soooo good!

Evening Snacks

vegan week day 4 5

…a veggie snack plate with hummus…

…fresh cantaloupe and grapes (sorry, I was too lazy to take a picture ;))…

…and some of these:

I'm Skinny snack sticks 7

(these are beyond delicious, by the way!)

Pretty exciting stuff, huh? 😉  Okay, maybe not, but it is Wednesday and that is exciting!  Have a great day everyone!

It is exciting that it’s Wednesday! 🙂 Radishes, huh? I have a hard time eating them unless they’re in a salad and I’m going to roast some per your recipe soon! 🙂 Yay for switching things up a bit.. Have a fab day!

    • cleaneatingveggiegirl July 17, 2013, 7:39 am

Yes, I definitely love radishes roasted MUCH more than raw, but I didn’t have time to roast them when I was packing my meals for work so I just went with it;).

  • jessielovestorun July 17, 2013, 8:19 am

Leave it up to you to give me the idea of roasting radishes… being the roasting queen that you are 🙂 Will have to give it a try.

  • swissfitchick July 17, 2013, 8:20 am

I LOVE your breakfast! Such a tasty combo!
I just had radishes with hummus last night for dinner, so good.

  • Erin July 17, 2013, 8:24 am

Those sweet potato skinny sticks?? YUM. I can’t do radishes, but that squash looks so good!

    • cleaneatingveggiegirl July 17, 2013, 4:56 pm

  • Alex@Veggin' Out July 17, 2013, 8:26 am

Why have I never thought to have a sweet potato for breakfast?!
That fruit and nut bar sounds delicious! Though I really should work through by current bar stash before getting another one… SHOULD being the key word 😉

  • dixya| food, pleasure, and health July 17, 2013, 8:42 am

    • cleaneatingveggiegirl July 17, 2013, 4:57 pm

Mojo bars are awesome, but these are amazing, too! Plus the ingredient list on these ones is fabulous.

      • Ani D July 17, 2013, 7:12 pm

They look very similar to Larabars!

  • Tara July 17, 2013, 9:13 am

I always try to like radishes but I can’t! I’m envious of you. 🙂

    • cleaneatingveggiegirl July 17, 2013, 4:57 pm

  • blonde hair blue eyed runner July 17, 2013, 9:51 am

I’m just seriously impressed every week, like so many veggies and fruits. I eat those but I def have a lot more ‘other’ foods too lol

    • cleaneatingveggiegirl July 17, 2013, 4:58 pm

Haha, I do my best to incorporate a lot in (plus I CRAVE most of them!), but I definitely have my indulgences too!

  • Brittany July 17, 2013, 10:03 am

NEW CLIF BAR?! I have never seen that one, I must look for it! Sounds similar to Larabars, which I LOVE!

  • Dana @ Conscious Kitchen Blog July 17, 2013, 10:34 am

Feels good to switch up a snack every now and then, doesn’t it? The veggies look delicious. I usually reach for fruit as a quick snack, but I should try to grab veggies more often. Maybe cutting them up the night before would help?

    • cleaneatingveggiegirl July 17, 2013, 6:15 pm

Yes, having them cut up/prepared ahead of time definitely helps. So does hummus, too! 😉

  • Marisa @ Uproot from Oregon July 17, 2013, 10:45 am

I am just shocked that there was not a banana……….

  • sprint2thetable July 17, 2013, 11:02 am

The ingredients in the kits organic fruit and nut bar sound a lot like the ingredients that go into a Larabar – I love Larabars!
I am in awe of anyone who can eat raw radishes – just cannot manage to choke them down!
glad to have stumbled on your blog

  • olivetorun July 18, 2013, 1:44 pm
