So, it may be Thursday and not Wednesday…but, better late than never, right? š
I am not sure how “sensible” my snacking was yesterday, but let’s just go with it!Ā It’s What I Ate Wednesday (on Thursday) time!
Breakfast
I brought my breakfast along with me to work yesterday.Ā Into the bowl went Kashi Go Lean cereal, Arrowhead Mills Puffed Corn cereal, and Multigrain Cheerios cereal.Ā I added unsweetened vanilla almond milk when I was ready to eat.
Mid-Morning Snack
A couple of hours later, this happened.
Lunch
Yesterday’s lunch was leftovers from Tuesday night’s dinner.Ā I enjoyed Tofu and Veggie Lettuce Wraps, which by the way, were super good!Ā Look for the recipe in a future Magazine Monday post!
I also ate a Red Delicious apple.
Afternoon Snack
I snacked on a Perfectly Simple Peanut Crunch protein bar on my drive to the gym.
Dinner
My Indian-themed dinner came straight out of the Happy Herbivore Abroad cookbook.
I made Masoor Dal (red lentil dal)…
…and saag (that’s spinach!).
They may not look pretty, but trust me, looks are most definitely deceiving in this instance.Ā And for those of you who are always concerned about my protein intake on a vegetarian/vegan diet…this dinner alone contained 25 grams of protein! š
Evening Snacks
Last night I snacked on:
A veggie plate of celery, radishes, carrots, and peas, which I dipped in this:
Trader Joe’s horseradish hummus.Ā Seriously, you guys, this stuff is awesome!Ā TJ’s has the best hummus flavors!
I also snacked on some fresh cantaloupe (my first “homegrown” cantaloupe of the season! yay!) and red grapes (unpictured)…
…and some air-popped popcorn.
All in all it was a great day of eats! š

I love Indian food so your dinner sounds amazing. Also, why do I never think to use lettuce for a wrap? I pretty much gave up on wraps once I figured out how many carbs are in them, I need to go back with your healthy version. And did I read you correctly? You grew your own cantaloupe?! How cool is that!
I just started using the hearts of Romaine to make lettuce wraps and I am loving them! You should definitely try it!

Woah, horseradish hummus?! WHY IS THERE NOT A TJS HERE? Okay. Done yelling š Saag is one of my favorite Indian foods, I love it with mushrooms, yum yum
Yes, I was a bit nervous to try the horseradish hummus, but I am HOOKED. I feel bad that you don’t have a TJ’s near you :(.
I made the saag about a month ago with mushrooms and red peppers added in and it was so good!

That was one of my favorite hummus’s from TJ’s. I miss TJ’s so much since moving to Denver (don’t worry- they are building one now!)…I get sad when i see people posting products from there. haha

Better late than never is right, because lady, I had no idea about that TJ’s hummus flavor. Will be buying this weekend FOR SURE omg so excited. I hope mine carries it.

I love that TJs horseradish hummus! Have you ever tried the white bean & basil one? That is my absolute favorite.

Loving the look of that lettuce wrap it looks really delicious! My boyfriend and I went to Hawaii in January and there was one hotel we stayed at that did beautiful tofu lettuce wraps and I’d forgot all about them will I saw your post, makes me want one again now š
