WIAW: May 8, 2013 + The Best Vegetarian BLT

Since I was in South Dakota last week, I missed out on participating in the What I Ate Wednesday festivities.  I am glad to be back home now, and am even more happy to be a part of the What I Ate Wednesday party again!  Let’s take a look at today’s delicious eats (most of them, anyways!).

Breakfast

So this isn’t exactly a picture of today’s breakfast.  I am ashamed to admit this, but I actually forgot to take a picture of today’s breakfast.  Apparently, I forgot that it was Wednesday.  I did, however, take a picture of yesterday’s breakfast because it was definitely picture-worthy.  I made a breakfast sandwich consisting of two slices of toasted whole wheat bread, half of a smashed avocado, scrambled eggwhites, and blackberry jam.  I have a feeling that this may be a new “regular” in my breakfast routine.

I also ate a bowl of vanilla Greek yogurt with berries.

Mid-Morning Snack

The usual…though this banana was especially good.  Yay for brown spots!

Lunch

For lunch I ate leftovers from last night’s dinner: Southwest Quinoa Bake.  I’ll be posting this recipe soon…hopefully tomorrow!

I also ate a Red Delicious apple (sorry, no picture) about an hour later.

Snack

I ate a peanut honey pretzel Luna protein bar on the way to the gym.  This flavor is seriously delicious!

Dinner

Tonight’s dinner was AWESOME.  I ate roasted green beans and a dill pickle spear.  But the real star of the show was the vegetarian BLT sandwich that I concocted.  The Best Vegetarian BLT (in my opinion ;)) consists of: 2 slices of toasted whole wheat bread, lettuce, onions, tomatoes, vegetarian “bacon” (I used the MorningStar Farms brand), half of a smashed avocado, and sriracha mayo (I simply combine Vegenaise vegan mayo with a little bit of sriracha sauce).  This sandwich is TO. DIE. FOR.

Snacks

Snacks for tonight have/will consist of:

A vegetable plate with celery, tomatoes, zucchini, baby carrots, and TJ’s tomato and basil hummus (so good!)…

…fresh cantaloupe and black seedless grapes (sorry no picture because I have not eaten them yet! ;))…

BBQ I’m Skinny Snack Sticks.  Seriously, you guys.  These are AMAZING!  I could eat the entire bag in one sitting! 😉  You absolutely must track these down and try them ASAP.

    I have yet to try the egg and jam combo, but it seems to be all the rage. The Luna bar flavor sounds like a winner--sweet and salty combos are so tasty!! Looking forward to the quinoa recipe!

    Wow - this is why I love WIAW! I would never think to make that kind of breakfast combination, but it sounds pretty tasty - I may just have to try it :-)

    The sweet and savory combo for breakfast seems to be quite popular around the blog world these days. At first I thought an egg and jam sandwich sounded kind of gross, but now I'm convinced it would delicious :) Great day of eats! That basil hummus looks so creamy. Perfect for dippin!

    I never have combined avocado with jam but that sounds AWESOME! Definitely will have to try that soon :D

    Ugh, all of your sandwiches sound epic. I'm jealous of all of the avocado in your life! And your Morning Star Farms bacon. Ran out like a month ago and I keep forgetting to buy more!

    Awesome day of eats! How do you like the vegan bacon? That's probably the only vegan meat product I haven't ever tried, but I love the idea of a BLT!

      The bacon is SO good!! I love it! And, unfortunately, it is actually just vegetarian, not vegan :(.

    That BLT does look amazing! I'm not a huge bacon fan, so I always have my BLTs sans the B, but I should try this version!

    Oh boy all your food looks super tasty! And you snack plate made me smile! I love all veggies with nut butter. So good. I LOVE avocado and jam together! You need to try avocado and almond butter or peanut butter together! It's SO delicious.

    I'm not a pork eater at all so your version of a BLT sounds much more up my alley! I've been wanting to try that flavor Luna bar...sounds DELISH!

      Veggie BLTs are the best. I never liked BLTs when I was a meat-eater, but I love them as a vegetarian.

    That luna bar is seriously my favorite flavor lately...so good! I love the idea of using smashed avocado on a blt...looks yummy!
