Lots of 14’s in that title there ^^

You know I have a thing for fun number combinations, so May 14, 2014 sounds like a pretty appealing day.  Too bad 14 is not my lucky number.  I guess I will have to wait until 2026 for that to happen… only 12 more years! 😉

But since this is a fun numbers day and it is Wednesday, I should center this post around all good things.  Food is good, right?  Yes, let’s go with that!

In last week’s What I Ate Wednesday post, I was lazy and made one photo collage for you.  In all honesty, though, I really enjoyed the collage look.  This week I put a little bit more effort into the presentation and made you multiple collages.  Collages are fun, right?  I sure hope you enjoy them at least or I might be in trouble.  I’d sure like for you to stick around!

What I Ate Wednesday Last Saturday

Breakfast

WIAW 51414 2Breakfast was a two-parter as usual.  The first part was a deeeelicious cold green smoothie that I drank after my morning walk.  A couple of hours later I ate one of the best breakfasts that I have eaten in awhile.  It included a toasted whole wheat English muffin topped with a tasty pea/hummus mixture that I came up with and will be sharing with you soon.  On the side I ate a fried egg and cottage cheese.  I pretty much avoided cottage cheese for the last year since it is not vegan and there really aren’t any good substitutes.  But I got tired of being without it so it is back!

Lunch

cauliflower buffalo wingsOhhh my goodness, this was SO good!  Seriously.  And no, those are not buffalo wings.  But close!  I made cauliflower buffalo wings for the first time and loved them.  I’ll be posting more about these in the future.  I dipped them in ketchup since I did not have any ranch dressing, and I ate some roasted brussel sprouts on the side.

Dinner

DSC_0417Dinner was the Happy Herbivore’s Eggless Salad that I served on rice cakes with spinach.  I ate a dill pickle spear on the side, of course!

Snacks

WIAW 51414 3And finally, I snacked on all sorts of goodness throughout the day including: popcorn, a Granny Smith apple with almond butter, and carrots.  I pick out some darn good snacks, if I do say so myself.

    I have been meaning to do a cauliflower chicken wing/chicken nugget type thing and keep forgetting. I pin the recipes and then totally forget all about it!

    Foodie collages are the best! I actually learned about doing them from the queen of WIAW herself!

    I always think I could never be a vegetarian…but this post makes me think maybe I could. If you would write me meal plans. 😉

      You could SO do it, or at least Meatless Mondays. Veggies eat some darn good food. But yes, a meal plan would help. I have definitely learned a lot along the way!

    Well you ate a lot of really tasty looking things on Saturday!! I have been meaning to try making cauliflower buffalo wings for the longest time … I need to do it! Excited to hear more about them!

    Twinning again on the popcorn! You must try it drizzled with truffle oil (we got a little bottle at WF)…it’s insanity!!!

    Ok all of your meals look fantastic! I can’t wait for the pea hummus and buffalo cauliflower recipe. I have been craving egg salad recently and your post makes me want it even more.

    I’ve been wanting to experiment more with peas. They seem to be the new way of getting protein into energy bars, etc. Avocado and peas together sounds great!

      Peas are definitely one of my favorite veggies and the fact that they have as much protein in them as they do is super impressive!

    I am absolutely fascinated by that cauliflower buffalo wings. I am trying to transition from a 100% carnivore to a full-on veggie. In my 6 months of transitioning, I am now a semi-meat eater – a “chicken-tarian”, if you will. I’d love to see the recipe of this. Thanks for sharing!
