Hey there!
I’m Ashlee from over at His-n-Hers Healthy-n-Happy (it’s a mouthful, right?), and I’m filling in for Hannah today while she’s out enjoying herself during her Blogcation. I’ve got some big shoes to fill, as I always love seeing the creative & delicious meals Hannah comes up with!
So how about a little bit about the girl behind my blog!
I’m a 26 year old Texan, wife (as of 1 year + 2 weeks ago!), wino, wannabe cook, doggie momma, workout enthusiast, blogger, vegetarian, accounting grad turned HR lover, and am constantly getting myself into predicaments (way too clumsy & ditzy!). My hubby and I are high school sweethearts but are pretty much polar opposites, starting with our diets. After being strictly vegan for 3 years, I’ve recently loosened up and will eat eggs and then dairy occasionally. The hubby on the other hand is a meat and taters kind of guy, but will humor me and at least try to love the weird concoctions I force him to try every night. It’s taken a while, but I’m finally learning how to keep us both healthy & happy under one roof without driving myself crazy in the process.
When I initially spoke with Hannah about guest posting, I decided I was going to come up with an uber healthy, fancy new recipe using new to me trendy ingredients that would please the masses. But who was I kidding, I’m none of those things!
Enter the Pizza Quesadilla. Quesadilla on the inside, pizza on top. Cheesy, crunchy, and delicious! There was only one problem. This “recipe” isn’t really a recipe at all!
Stuff two whole wheat tortillas with your favorite pizza ingredients and cook it up like a quesadilla in a skillet. Top it with more of your favorite pizza ingredients and bake it until finished. See? no recipe needed!
Instead of writing up a ridiculously easy recipe for yet another quesadilla, I decided to share my 3 favorite summer meals as of today. Keep in my that I’m very indecisive and my idea of my favorite anything changes about every 30 seconds.
Healthier Tofu Pad Thai. I can’t. get. enough. I think I’ve eaten this at least 15 times since I first created it about a month ago. Spicy, slightly sweet, and totally customizable. You can’t beat that! Also for a fun change, you can sub quinoa for the brown rice pasta and it turns it into a whole new recipe…the Tofu Quinoa Bowl!
Roasted Summer Veggie Pizza. Have you ever been to an Italian restaurant where you get a choice of three sauces..red, white or a mix? The Cellar is an Italian restaurant Blacksburg, VA. This is like that mix, but in a totally healthy, amped up protein kind of way. Topped off with roasted yellow tomatoes, grilled corn and feta cheese. The combination of flavors is out of this world. Oh and did I mention how easy and quick it is? Even my meat-eating husband loved it. Gasp!
Creamy Spinach, Artichoke & Goat Cheese Pasta. This lemony, creamy pasta was a random dinner that came together because I was low on groceries and wanted to use up what I had. It was my luckiest, most tasty accident ever.
As you can see I’m a big carb lover. I try to balance it out with my other meals, but just to be on the safe side I throw some tough cardio workouts in there too. Like this super sweaty one that is my current fav!

It IS Jan! I got a little obsessed after the first time I made it and ate it like every day for a couple of weeks 😉 It’s good with quinoa subbed in for the noodles too!
