WIAW: June 19, 2013

in Other

In the healthy living blogging community, most bloggers’ What I Ate Wednesday posts actually feature their eats from Tuesday.  Most weeks, however, I tend to post on Wednesday evenings and feature my eats from that day.  This week, though, I am following the crowd ;).  Here is what I ate Wednesday Tuesday.

WIAW June

Breakfast

WIAW 61913 2

Tuesday’s breakfast featured a baked sweet potato (which I “baked” in the microwave Monday night) topped with half of an avocado and sea salt.  Sweet potatoes and avocados make everything better, so I figured why not combine the two?  I also ate a banana on the side.

Mid-Morning Snack

WIAW 61913 3

I ate fresh pineapple, blackberries, and raspberries for my mid-morning snack.  Unfortunately, the raspberries and blackberries weren’t all that tasty :(.

Lunch

friday favorite WIAW 61913

Lunch consisted of leftovers from Monday night’s dinner: Black bean tacos in hearts of Romaine lettuce “shells” topped with salsa and cherry tomatoes.  So, so tasty!

I also ate a Gala apple on the side (unpictured).

Afternoon Snack

On Monday I came home to a package at my doorstep containing several different varieties of Clif bars.  I packed one of them for my after-work snack to eat on the way to the gym.

WIAW 61913

I loved this flavor and the crunchy texture was awesome.  I probably should have planned better and not eaten these (you get two in a package!) in the car, though.  I made a bit of a mess! 😉

Dinner

filet o fish 4

For dinner I made Michelle’s vegan Fish o’ Filet sandwich.  I adapted the recipe slightly by using bread crumbs and adding a couple of dashes of Old Bay Seasoning.  I served the filet on whole wheat toast with fresh spinach leaves, onion, and Vegenaise vegan mayo.  On the side I ate a dill pickle spear and roasted turnip fry wedges (more on these a different day!).  It was SUCH a tasty dinner.

Evening Snacks

Last night I snacked on:

WIAW 61913 4

Celery, radish slices, cherry tomatoes, and baby carrots with Trader Joe’s chipotle hummus…

WIAW 61913 6

…fresh cantaloupe and green grapes…

WIAW 61913 5

…and air-popped popcorn (my favorite snack right now!).

Happy Wednesday, all! 🙂

  • Eating 4 Balance June 19, 2013, 10:50 am

Aw, I’m going to miss getting your WIAW in my bloglovin on Wednesday nights. It was like a little present after I thought I had run out of WIAWs to read 🙂

So strange not to see a banana as your mid-morning snack as well! Haha.

That fish fillet from Peachy Palate looks so good. And those vegetable chips on the side sounds amazing as well.

    • cleaneatingveggiegirl June 19, 2013, 12:45 pm

Haha! You know me WAY too well with that banana ritual! 😉

And don’t worry, I imagine that I will still be doing some WIAW posts on Wednesday nights! I am not always prepared/organized enough to get them written on Tuesday nights! 😉

  • Michelle @ Eat Move Balance June 19, 2013, 11:06 am

I’m obsessed with popcorn. My favorite snack!! I don’t know that I’ve had sweet potato and avocado together, but you’re right, they both are amazing, why not? 🙂

  • Tara June 19, 2013, 11:14 am

The berries in San Francisco aren’t too sweet right now either. Hopefully they get tastier in the next few weeks!

    • cleaneatingveggiegirl June 19, 2013, 12:46 pm

No kidding! It is pretty disappointing especially when they LOOK good! 🙁

  • Andrea @Pencils and Pancakes June 19, 2013, 11:17 am

  • Kelly @ hidden fruits and veggies June 19, 2013, 11:32 am

That dinner sandwich sounds kind of amazing, I’mgoing to have to check out that recipe. I’m also pretty jealous of the veggie plate you have every night for a snack — after dinner, all I want to eat is sweets, I wish I had your will power!

    • cleaneatingveggiegirl June 19, 2013, 12:47 pm

I actually CRAVE my veggie plates! Mostly because I am pretty much obsessed with baby carrots and hummus :).

  • kimathungryhealthygirl June 19, 2013, 12:35 pm

I need to try that avocado/sweet potato combo….sounds interestingly delish! My kids love those crunchy Cliff bars and you’re right, they are a tad on the messy side. 😉

  • jumpeatrun June 19, 2013, 12:35 pm

    woohoo for pickles!!

    • cleaneatingveggiegirl June 19, 2013, 12:48 pm

Pickles are a MUST with pretty much every sandwich that I eat.

Avocado and sweet potato together = amazing!!

  • lifesarunner June 19, 2013, 12:45 pm

That snack plate is completely up my alley! It’s becoming my go-to for lunch, snacks, dessert, you name it 🙂 I saw those Crunch bars at the grocery store but decided not to buy them…mistake? Great day!

    • cleaneatingveggiegirl June 19, 2013, 12:49 pm

Definitely a mistake! That is the first flavor that I have tried so far, but I was loving it. If you like crunchy granola bars then you would definitely like these!

  • Kelly @ Vegan Iowan June 19, 2013, 1:28 pm

  • makingthymeforhealth June 19, 2013, 3:20 pm

That fish fillet sandwich looks tasty!

  • ahealthyhappyhome June 19, 2013, 3:51 pm

Haha! At first glance i thought you ate the sweet potato raw for breakfast! That would be a new way to enjoy it!

    • cleaneatingveggiegirl June 19, 2013, 6:50 pm

Haha, yeah when I took the picture it was definitely raw. I’m not sure how tasty that would be.. ;).

  • Nicole @ FruitnFitness June 19, 2013, 7:37 pm

    Yummy dinner. 🙂

  • Pleadings & Pasta June 19, 2013, 9:56 pm

Agreed, air popped popcorn is the best! I probably should invest in an air popper with as quickly as I go through a bag of that stuff. Yum!

    • cleaneatingveggiegirl June 20, 2013, 11:40 am

Air-poppers are awesome and MUCH healthier. They don’t cost very much, either!

  • Fit 'n' Well Mommy June 19, 2013, 11:55 pm

Your roasted turnip fries look good! I love roasted sweet potato and butternut squash fries, so I’ll have to try turnips next time.I love air popped popcorn, too! My new favorite is air popped popcorn with a drizzle of coconut oil and a pinch of sea salt on top…YUM!

    • cleaneatingveggiegirl June 20, 2013, 11:41 am

I love spraying my popcorn with TJ’s coconut oil spray and then sprinkling it with sea salt and nutritional yeast. Yum!!

  • ashley June 20, 2013, 12:44 am

  • Caitlyn June 20, 2013, 8:33 am

all i really have to say is: UM THIS ALL LOOKS SO GOOD.

  • Dan from Platter Talk June 20, 2013, 8:57 am

What a great post. Thanks for inspiring me!!

  • Nausheen@ Fifteen&Eating clean June 20, 2013, 11:45 am

Everything looks delicious! Really want to try a sweet potato now…with avocado on top :d

  • katalysthealth June 20, 2013, 2:53 pm

Raspberries and blackberries are my least favorite berries because if you don’t get a good batch, then they are almost inedible. When they are juicy and perfectly ripe though? You best watch out. I end up with purply-red hands and lips!

  • P June 20, 2013, 3:00 pm

Vegan filet-o-fish? How good does that sound :D!

  • mvwinter27 June 20, 2013, 5:24 pm

Such healthy snacks and eating- thanks for the inspiration!
