In the healthy living blogging community, most bloggers’ What I Ate Wednesday posts actually feature their eats from Tuesday. Most weeks, however, I tend to post on Wednesday evenings and feature my eats from that day. This week, though, I am following the crowd ;). Here is what I ate Wednesday Tuesday.
Breakfast
Tuesday’s breakfast featured a baked sweet potato (which I “baked” in the microwave Monday night) topped with half of an avocado and sea salt. Sweet potatoes and avocados make everything better, so I figured why not combine the two? I also ate a banana on the side.
Mid-Morning Snack
I ate fresh pineapple, blackberries, and raspberries for my mid-morning snack. Unfortunately, the raspberries and blackberries weren’t all that tasty :(.
Lunch
Lunch consisted of leftovers from Monday night’s dinner: Black bean tacos in hearts of Romaine lettuce “shells” topped with salsa and cherry tomatoes. So, so tasty!
I also ate a Gala apple on the side (unpictured).
Afternoon Snack
On Monday I came home to a package at my doorstep containing several different varieties of Clif bars. I packed one of them for my after-work snack to eat on the way to the gym.
I loved this flavor and the crunchy texture was awesome. I probably should have planned better and not eaten these (you get two in a package!) in the car, though. I made a bit of a mess! 😉
Dinner
For dinner I made Michelle’s vegan Fish o’ Filet sandwich. I adapted the recipe slightly by using bread crumbs and adding a couple of dashes of Old Bay Seasoning. I served the filet on whole wheat toast with fresh spinach leaves, onion, and Vegenaise vegan mayo. On the side I ate a dill pickle spear and roasted turnip fry wedges (more on these a different day!). It was SUCH a tasty dinner.
Evening Snacks
Last night I snacked on:
Celery, radish slices, cherry tomatoes, and baby carrots with Trader Joe’s chipotle hummus…
…fresh cantaloupe and green grapes…
…and air-popped popcorn (my favorite snack right now!).

It has been forever since I have had a crunchy granola bar, but I am LOVING these so far! Delicious :).

I’m obsessed with popcorn. My favorite snack!! I don’t know that I’ve had sweet potato and avocado together, but you’re right, they both are amazing, why not? 🙂

I actually CRAVE my veggie plates! Mostly because I am pretty much obsessed with baby carrots and hummus :).

That snack plate is completely up my alley! It’s becoming my go-to for lunch, snacks, dessert, you name it 🙂 I saw those Crunch bars at the grocery store but decided not to buy them…mistake? Great day!
Definitely a mistake! That is the first flavor that I have tried so far, but I was loving it. If you like crunchy granola bars then you would definitely like these!

I always love popcorn! Sweet potatoes and avocado are always an amazing combination! I like to do sweet potato, avocado and fried egg.It’s one of my favorite breakfasts that I don’t eat nearly enough.

Air-poppers are awesome and MUCH healthier. They don’t cost very much, either!
Your roasted turnip fries look good! I love roasted sweet potato and butternut squash fries, so I’ll have to try turnips next time.I love air popped popcorn, too! My new favorite is air popped popcorn with a drizzle of coconut oil and a pinch of sea salt on top…YUM!
I love spraying my popcorn with TJ’s coconut oil spray and then sprinkling it with sea salt and nutritional yeast. Yum!!

Raspberries and blackberries are my least favorite berries because if you don’t get a good batch, then they are almost inedible. When they are juicy and perfectly ripe though? You best watch out. I end up with purply-red hands and lips!
