Happy Wednesday, everyone! I am extra excited about this week’s Wednesday because tomorrow is my “Friday.” I am off of work on Friday so I only have one more work day to get through in order to make it to the weekend. I am pretty pumped! But enough of me making you all jealous ;), let’s get to the eats! Today’s What I Ate Wednesday post features my eats from both Tuesday and Wednesday of this week. I want to try to keep things interesting for you all (and I am very much a creature of habit), so I’ll be highlighting my favorite eats from the past two days.
Breakfast
So this was not actually what I ate for breakfast today. I totally forgot to take a picture of my breakfast :(. But, in my cereal bowl today were Kashi GoLean, Honey Kix, Arrowhead Mills Puffed Kamut, and Cascadian Farms Cinnamon Crunch cereals. I, of course, topped my cereal mix with unsweetened vanilla almond milk.
Mid-Morning Snack
The usual…a banana!
Lunch
Today’s lunch featured leftovers from Monday night’s dinner. I had a Hawaiian Portobello Burger (recipe to come in a future post!), a dill pickle spear (because these pair well with ALL sandwiches ;)), and…
…roasted kobucha squash! I read about how good kobucha squash is for MONTHS on so many blogs. Well, a week or two ago I finally bought one and roasted it. And what can I say…I should not have waited so long to buy one. This is my new obsession! I roasted another one on Sunday and am trying to slowly work my way through it. Does anyone else like to eat it cold? I have been eating it straight out of the fridge!
Afternoon Snack
After work, I snacked on a Red Delicious apple…
…and roasted seaweed sheets. I am pretty obsessed with these at the moment, too!
Dinner
Tonight’s dinner consisted of mini polenta pizzas. I actually ate seven of these beauties and they were SO good! Don’t worry, there will be more to come on these pizzas in a future post!
Evening Snacks
Last night’s snacks consisted of:
A vegetable snack plate (peas, carrots, radish slices, and chipotle hummus)…
…and a bowl of french toast scrambled eggwhites (eggwhites, vanilla extract, and cinnamon) with roasted kobucha squash, all topped with PB2 peanut butter. This was a new concoction for me, but it is definitely one that I will be making again soon.
All in all, these past few days have been fantastic in the eats department! 🙂

Do you put anything on the kabocha squash before roasting? I’ve roasted butternut squash but never tried these!
All that I did was spray it with olive oil spray and sprinkle it with pepper, sea salt, garlic powder, and onion powder. It turned out SO delicious!

Pickles are an absolute must! And to think that I never used to like them! 😉
Looks like a great day of eats! I’m a little jealous of your cheerios, used to be one of my favorite cereals before going gluten free. Thank god for Puffins though, or I don’t know what I’d do lol

The polenta pizzas look so good and so cute! I love Kabocha squash and just stalked up since they were on sale at Sprouts for 99 cents a pound!

I am always eating kabocha straight up cold.. oh & with some peanut butter & maple syrup on top!!

I LOVE kabocha squash! I have been eating it cold every day as a snack. I have it packed in my lunch bag for my afternoon snack today! Also Hawaiian mushroom burgers sound amazing!

Well you need to roast LOTS of kobucha so that you can try it cold!

I genuinely LOVE healthy food and fruits/veggies! But trust me, I have my splurges!! We all need pizza and froyo :).
I’ll eat kabocha in any way shape or form. Love it! Roasted on the grill or in the oven is my favorite. I toss it on top of salads for lunch–it’s my favorite part!
I have never thought to grill it, but that is a fabulous idea!
