BBQ “Chik’n” Salad + Larabar Giveaway Winner!

Isn’t she a beauty?  And she tastes just as good (if not better!) than she looks!  This is the perfect Summer salad just in time for the start of the best time of the year!

BBQ “Chik’n” Salad

Servings: 2

Ingredients

olive oil cooking spray
2 vegetarian “chik’n” cutlets or strips (I used Quorn brand)
1 large bag of fresh spinach
1/4 red onion, diced
2/3 cup corn (grilled or fresh from the cob)
1/2 small tomato, diced
1/3 cup + 6 TB of your favorite barbecue sauce

Directions

1. Spray small skillet with olive oil cooking spray.  Heat over medium heat.

2. Cook “chik’n” according to the package directions until heated through.

3. Add 1/3 cup of barbecue sauce to the “chik’n” and simmer over low heat until warm.

4. Prep your salad by placing half of the spinach, onions, corn, and tomatoes onto each plate.

5. Slice the “chik’n” into bite-sized pieces and place onto the salad.

6. Top the salad with barbecue sauce in place of dressing.

I have found that while barbecue sauce may be a bit less traditional to use as a “dressing” on a salad, it is actually quite tasty.  The first time that I used barbecue sauce in place of dressing was on a day when I was eating vegan and ate at a restaurant that did not offer any dairy-free dressing options (how seriously sad in this day and age!).  I was pleasantly surprised by how much I liked this alternative to the more traditional salad dressing, and I think that I especially liked it so much because I absolutely love barbecue sauce!  Does anyone else associate barbecue sauce with Summer foods?  I know that I sure do!  Thus, this makes for the perfect salad on a hot Summer day when you need a great lunch option or feel like eating a bit lighter dinner.

Oh, and for those who are curious…the Quorn “chik’n” cutlets are great!  I definitely recommend cooking them on the stove top as opposed to in the microwave, and when done so, they taste eerily close to the real thing!
