Am I the only one who finds today’s date really cool?Ā I mean just look at it: 3-13-13.Ā I’d say if your lucky number is “3” then today is your day! šĀ Today might also be your day if you are, like me, super excited that we have made it more than halfway through the work week!Ā Oh, and I am also super excited about the fact that it is Wednesday and I get to share with all of you my day’s eats!Ā That’s right…What I Ate Wednesday has rolled around once again!
As I mentioned last week, this month’s theme is “Going Green.”Ā I did not do very well at the green thing with last week’s eats, but I promised that I would make up for it today.Ā Now let’s see just how well I did!
Breakfast
Breakfast started off with a sweet and savory waffle-wich consisting of 2 Kashi blueberry waffles, 1 Laughing Cow garlic and herb cheese wedge, blackberry jam, and a sunny-side up egg.
I put the two waffles together to make the waffle-wich sandwich and ate a sliced Golden Delicious apple on the side.
Mid-Morning Snack
Per usual, the banana made an appearance!
Lunch
Today’s lunch was centered around this giant salad consisting of field greens lettuce, spinach, carrots, mushrooms, tomatoes, broccoli, orange peppers, red onions, and radishes.Ā I topped the salad with a yogurt-based ranch dressing.
I paired my salad with 2 Wasa Wholesome Wheat cracker breads (um, yum!)…
…and celery with PB2 peanut butter.
Snack
I snacked on some almonds before heading to the gym for my workout.
Dinner
Dinner was an awfully tasty meal!Ā I ate two slices of Mexican Vegetarian “Meatloaf” (recipe to come!) topped with a little bit of sriracha sauce.Ā On the side I enjoyed some delicious roasted asparagus.
Snacks
Tonight’s snacks have and will consist of:
roasted parsnips and radish chips
cooked green peas
fresh cantaloupe
air-popped popcorn
All in all, it has been a GOOD day of eats! š
So how did I do with the “green” theme this week?Ā Total green count: 7 (apple, lettuce/spinach, broccoli, celery, zucchini in the “meatloaf,” asparagus, peas).Ā Pretty darn good, if I do say so myself!

I used to eat that breakfast sandwich when I was pregnant! Literally the exact thing except I would just use sliced muenster or provolone! Sooo good!

Woah woah woah. garlic and herb cheese + jelly? That sounds terrifying. I mixed a swiss laughing cow and strawberry jelly this morning and it was amazing… but I’m not sure garlic and blackberries can be friends… is this an amazing flavor combo I’m missing out on?
I pretty much any of the flavors of Laughing Cow cheese with jam or jelly, but I think that the garlic and herb is my favorite. Give it a try! š

It is really tasty. It definitely has a sweeter taste to it as compared to grape jelly, for example.
Your breakfast looks so fun! The salad also looks great, I love big salads with lots of veggies.

Using a waffle as a sandwich is a great idea! And yes, I totally noticed the date. I also thought 3-11-13 was pretty good because it’s a palindrome.

Definitely did an awesome job getting in those greens! I love the wafflewich too, one of my favorites that I sadly haven’t had in awhile! Gotta fix that tomorrow morning.

I’d been thinking about the date yesterday too — I randomly found myself thinking “Oooh, wouldn’t it be cool to have a baby on a numerically awesome date like 3-13-13?” …As if anyone could even remotely plan for that. Aaah, my brain is a scary place sometimes.

I have got to try the roasted radish chips sometime. Sounds soo good! I’m sad that all the winter root vegetables and squash are slowly dwindling away. I love winter veggies but… I’m pretty excited for Spring/Summer produce!
