I know I say this a lot, but can you believe that it is already Wednesday night?  I feel as though this week is just flying by.  I guess this is a good “problem” to have, right? 😉

And you know what Wednesdays mean…

…it is time for What I Ate Wednesday!

Breakfast

Breakfast consisted of two toasted slices of Trader Joe’s sprouted rye bread (one piece with crunchy almond butter and a sprinkle of cinnamon, and one smeared with blackberry jam) all served on my cute new pink “lace” plate.  I found this fun little purchase on clearance at Home Goods for $1.60!  As a self-proclaimed foodie and food blogger, I love buying new dishes…maybe a little too much! 😉

I also ate a cup of blueberry Chobani Greek  yogurt topped with fresh strawberries and raspberries.  I won’t even tell you how much those raspberries cost.  It is a bit embarrassing, but I just had to have them!

Mid-Morning Snack

I ate a delicious, perfectly-ripe banana partway through my morning.

Lunch

I was SO excited about my lunch.  I ate leftover Thai Chickpea Pizza on a Cauliflower Sweet Potato Crust.  This pizza is seriously good.  I promise that I will post the recipe soon!

I also ate a side of fresh cantaloupe.

Snack

Before heading to the gym for a walk/run I snacked on some whole almonds.  These are definitely one of my go-to snacks.

Dinner

Tonight’s dinner consisted of Mexican Chili Mac Bake (recipe to come soon!) and a side of cooked green beans.  This was spicy, flavorful, and just downright delicious.  I cannot wait to eat my leftovers :).

Snacks

Tonight’s snacks have/will consist of:

Roasted Radish Chips
baby carrots with hummus
fresh blackberries
microwave kettle corn popcorn

And finally…who is ready for some snow?  Whether or not you are, if you live in the Omaha area it looks like we can expect somewhere between 8-12″ within the next couple of days.  Wish me luck with traveling to and from work! :/

    My mom and I were just talking about how fast this week is going! I love your new pink “lace” plate. What a steal! I think buying pretty dishes adds to the whole dining experience too! :) I'm going to be sitting on the edge of my seat for your Thai Chickpea Pizza on a Cauliflower Sweet Potato Crust recipe!

    That's my kind of breakfast! YUM! I hope your traveling to work wasn't too bad. The roads weren't great on my traveling either...spring will happen eventually haha.

      The drive to work was perfect. No snow at all and the roads were less busy since all of the grade/high schools have closed. The drive home, however, might be another story...

      LOVE square plates. Target always has so many great dishes on clearance so I am constantly on the lookout for them every time that I go.

    Oh I hope the storm isn't too bad for you guys. I love the strawberries and fresh raspberries. I buy some variation of fresh fruit every week, regardless of the cost because it's worth it, in my opinion. Raspberries also happen to be my favorite, and I will literally eat one of those little pints in a sitting. :)
