I know I say this a lot, but can you believe that it is already Wednesday night?Β I feel as though this week is just flying by.Β I guess this is a good “problem” to have, right? π
And you know what Wednesdays mean…
…it is time for What I Ate Wednesday!
Breakfast
Breakfast consisted of two toasted slices of Trader Joe’s sprouted rye bread (one piece with crunchy almond butter and a sprinkle of cinnamon, and one smeared with blackberry jam) all served on my cute new pink “lace” plate.Β I found this fun little purchase on clearance at Home Goods for $1.60!Β As a self-proclaimed foodie and food blogger, I love buying new dishes…maybe a little too much! π
I also ate a cup of blueberry Chobani GreekΒ yogurt topped with fresh strawberries and raspberries.Β I won’t even tell you how much those raspberries cost.Β It is a bit embarrassing, but I just had to have them!
Mid-Morning Snack
I ate a delicious, perfectly-ripe banana partway through my morning.
Lunch
I was SO excited about my lunch.Β I ate leftover Thai Chickpea Pizza on a Cauliflower Sweet Potato Crust.Β This pizza is seriously good.Β I promise that I will post the recipe soon!
I also ate a side of fresh cantaloupe.
Snack
Before heading to the gym for a walk/run I snacked on some whole almonds.Β These are definitely one of my go-to snacks.
Dinner
Tonight’s dinner consisted of Mexican Chili Mac Bake (recipe to come soon!) and a side of cooked green beans.Β This was spicy, flavorful, and just downright delicious.Β I cannot wait to eat my leftovers :).
Snacks
Tonight’s snacks have/will consist of:
Roasted Radish Chips
baby carrots with hummus
fresh blackberries
microwave kettle corn popcorn
And finally…who is ready for some snow?Β Whether or not you are, if you live in the Omaha area it looks like we can expect somewhere between 8-12″ within the next couple of days.Β Wish me luck with traveling to and from work! :/

Ahh good luck with the snow! I’m praying ours goes away soon. Your pizza looks phenomenal; can’t wait for the recipe.
Yes, the snow should definitely make things interesting! :/
My mom and I were just talking about how fast this week is going! I love your new pink βlaceβ plate. What a steal! I think buying pretty dishes adds to the whole dining experience too! π
I’m going to be sitting on the edge of my seat for your Thai Chickpea Pizza on a Cauliflower Sweet Potato Crust recipe!
I think that I get way too much enjoyment out of buying new dishes! The life of a food blogger…
Good luck with the snow!!
Thank you! π
Ummm… That pizza looks amazing! I can’t wait for the recipe!
I think I will be posting it sooner than I had originally planned…it is THAT good and I want people to have the recipe ASAP :).
Eek! Careful with all that snow!! Stay warm!
I’ll try my best! π

I am SO looking forward to this Mexican Chili Mac Bake recipe!! Good luck with all the snow! π
Thank you!!
That’s my kind of breakfast! YUM! I hope your traveling to work wasn’t too bad. The roads weren’t great on my traveling either…spring will happen eventually haha.
The drive to work was perfect. No snow at all and the roads were less busy since all of the grade/high schools have closed. The drive home, however, might be another story…
whoa that lunch pizza crust looks freaking amazing!
It is super tasty! I cannot wait to share the recipe!
Love the new plates. Also, I’m guilty of paying a little too much for my fruit too. Whatever, it’s healthy!
That is exactly what I tell myself every time that I splurge on fruit or vegetable purchases!
that dinner looks so good! i always am getting new plates too! i have a thing for square plates, slight obsession.. lol
LOVE square plates. Target always has so many great dishes on clearance so I am constantly on the lookout for them every time that I go.
I’ve been loving bananas and cantaloupe like crazy this week π And I’m definitely looking forward to those 2 recipes – major tease!
The cantaloupe has actually been really good lately even though it is not in season. Such a pleasant surprise! π
That pizza looks so good!
Thanks! It really is :).
umm cannot wait for that chili mac recipe!! that looks delicious
Soon, very soon! π
Your Wednesday menu looks super healthy π Careful in the snow storm!
It was definitely a very good day of eats :).
That pizza looks amazing – quite embarrassed how excited I am for the recipe haha. And I love that plate as well, what a bargain!
it is definitely a recipe worth waiting for :).
Good luck with the snow! My mom and brother got off school today already and they haven’t even been hit with a single inch yet. Not fair. Not fair at all.
Can’t wait for that pizza crust recipe! Looks delicious!
I LOVE trader joe’s sprouted rye! And everything else they sell π
I LOVE that lace plate! Oh my goodness, it is so beautiful! HomeGoods has some of the best stuff and so cheap!
Oh I hope the storm isn’t too bad for you guys.
I love the strawberries and fresh raspberries. I buy some variation of fresh fruit every week, regardless of the cost because it’s worth it, in my opinion. Raspberries also happen to be my favorite, and I will literally eat one of those little pints in a sitting. π
That Thai Chickpea Pizza looks great!
