My boyfriend is visiting me and I don’t want to be a snob, so let’s keep this short and sweet ;). Here it is… What I Ate Wednesday!
Breakfast
Breakfast today was the same as last Wednesday’s breakfast: Kashi Go Lean cereal, plain Cheerios cereal, and Multigrain Cheerios cereal with Silk unsweetened vanilla almond milk. I ate my staple banana as a mid-morning snack at work.
Lunch
On my lunch break at work I enjoyed leftovers from last night’s dinner (hence the nice picture ;)). Lunch consisted of Baked Sweet Sesame Tofu and roasted broccoli, parsnips, and sweet potatoes.
I also ate a Red Delicious apple, which is very rare for me as I usually prefer a sweeter apple. However, it was quite refreshing to enjoy something out of the ordinary!
Dinner
Dinner tonight was a good one! I cooked Chickpea Tacos from The Happy Herbivore Cookbook. I filled my whole grain taco shells with the roasted chickpeas found in the cookbook, shredded lettuce, onions, green peppers, tomatoes, and jalapeno salsa. On the side I ate fresh cantaloupe and blueberries. The sweetness of the fruit was a nice contrast to the spiciness of the tacos.
These Chickpea Tacos were darn good! Even the meat-eating boyfriend really enjoyed them. I will definitely be making these again.
Snacks
I ate a serving of baby carrots with Greek hummus for an afternoon snack. Tonight’s snack will mostly likely consist of some air-popped popcorn!
We made it through Wednesday! The work week is almost over! 🙂

Those tacos look amazing! I need to go pick up the Happy Herbivore’s cookbook. 😉 Lol…I, too, often eat air-popped popcorn at night with hubby, while we sit on the couch with our computers. 😀
You should definitely look into purchasing one or all of the cookbooks. I have yet to make something from them that I didn’t love!

It is very good! I always encourage people to try baking tofu when they have never cooked with it before since it is so easy. I love to experiment with different marinades, too!

Ohh that cereal looks good! I never really have time to make a big breakfast so I may have to look into getting some Kashi cereal.
