Roasted…Part 1: Asparagus

Have you ever tried roasting vegetables?  I just recently began roasting my own veggies to serve as sides and now I wonder why it took me so long to start cooking vegetables this way.  It is so easy and so delicious, and you can pretty much roast just about any vegetable that sounds tasty to you! 

 

 

 

 

 

Including…asparagus!  Here is a simple recipe for roasting asparagus:

Ingredients
1 bunch of asparagus
1-2 tablespoons of EVOO (extra virgin olive oil)- I would start with 1 tablespoon and add more as needed as you do not want the asparagus to get too soggy
garlic powder
onion powder
black pepper
sea salt

1. Preheat oven to 425 degrees F.  Wash and dry asparagus.

2. Cut off the ends of the asparagus (the bottom end).

3. Toss together the asparagus with EVOO, a sprinkling of garlic powder, a sprinkling of onion powder, and black pepper (sorry, I do not have exact measurements as I simply sprinkle in a bit of each seasoning).

4. Place asparagus onto a foil-lined cookie sheet.

5. Bake asparagus for 6 minutes.  Flip the asparagus.

6. Bake asparagus an additional 6-7 minutes, or until golden brown and “roasted.”

7. Sprinkle with sea salt..and EAT!
