Ingredients
  • 1 cup tigernut flour
  • 1/4 cup arrowroot powder (plus extra for flouring)
  • 3 TB carob powder (or cacao or cocoa powder if not AIP)
  • 1 TB dry gelatin powder
  • 1/8 tsp baking soda
  • 1/8 tsp sea salt
  • 1/3 cup virgin coconut oil (measure in solid form)
  • 1/4 cup pure maple syrup
  • 1/2 tsp pure vanilla extract (alcohol free if AIP)
Instructions
  1. Preheat oven to 350 degrees F.

  2. Sift together tigernut flour, arrowroot powder, carob powder, gelatin powder, baking soda, and sea salt in a large bowl.

  3. Melt coconut oil and whisk together with maple syrup and vanilla extract.
  4. Add wet ingredients to dry ingredients. Stir until combined. Refrigerate "dough" so that it is easier to work with. Refrigerate for 10 to 15 minutes, but no longer as it will harden.
  5. Spread a dusting of arrowroot powder onto a sheet of parchment paper. Place the dough ball onto the sheet. Cover with a second piece of parchment paper. Use a rolling pin to roll out to approximately 1/8" thick.
  6. Use a small circle cookie cutter to cut out wafers. Place onto a parchment paper-lined baking sheet. Bake for approximately 6 to 8 minutes. Watch carefully, as oven times vary.
  7. Remove from oven, let cool, and store in the refrigerator.
