Y’all, I have not been doing so hot on the meal planning front.  I’m not going to lie, I always thought people were being dramatic when they said it was nearly impossible to get anything done with a baby constantly at your side.  Turns out, I was wrong and they are 100 percent right.  As a result, meal planning has been tough.  Luckily, my hubby totally doesn’t mind that we eat protein and veggie-packed stir-fry dishes on the regular.

I really don’t think you can go wrong with a dish that is super nutrient-rich, is customizable based on whichever veggies and proteins you are currently craving, and actually puts those knife skills to work without being too overly complicated.  Multitasking is now the name of my game, so I have to be able to chop, cook, and entertain a baby all at the same time!

Healthy Tuna Stir Fry Recipe

You might not be able to tell from the pictures, but this isn’t your average stir-fry recipe.  Oh heck no.  You know I don’t go for “average.”  While the veggies and sauce may be somewhat traditional, my protein of choice for this recipe is a bit different than what you might normally expect in a stir-fry.  Beef and chicken tend to be stir-fry standards, but it is time to think outside of the box the next time you add one to your meal plan.  This time we are thinking inside of the can.

Healthy Tuna Vegetable Stir-Fry

Ingredients

  • 1 TB of avocado or non-refined coconut oil
  • 1 medium red onion, diced
  • 1 medium head of organic green cabbage, shredded
  • 2 cups of raw organic broccoli, chopped
  • 2 cups of organic sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1 cup of organic snow peas, ends trimmed
  • 4 cups of organic riced cauliflower
  • 1 15 oz can of full-fat coconut milk
  • 2 5 oz cans of Wild Selections Solid White Albacore Tuna in Water, drained
  • 1/3 cup of coconut aminos
  • 1/4 cup of raw creamy almond butter
  • 1/8 cup of avocado or melted non-refined coconut oil
  • the juice of one large lime
  • 1 tsp of raw apple cider vinegar
  • 4 cloves of garlic, minced
  • 1 to 2 tsp of fine sea salt
  • sliced green onions and chopped parsley for serving

Instructions

  1. Begin by preparing all vegetables. Set snow peas aside.
  2. Heat 1 TB of oil in a large skillet over medium heat. Once hot, add red onion, green cabbage, broccoli, and sweet potatoes. Cover with a lid and cook for 10 minutes, or until softened, stirring frequently.
  3. While the vegetables are cooking, begin heating the cauliflower rice either in the microwave or on the stovetop. Once heated through, add the full-fat cream from the top of the can of coconut milk. This gives the rice a nice creamy and delicious flavor. Cover with a lid and remove from the heat.
  4. Once the vegetables are cooked through, stir in snow peas and tuna. Lower the heat to medium-low and cook for approximately five minutes.
  5. While the snow peas and tuna are heating, combine the coconut aminos, almond butter, oil, lime juice, apple cider vinegar, and minced garlic in a medium bowl. Whisk to combine and poor into the vegetable and tuna mixture.
  6. Continue cooking for an additional three to five minutes, or until the sauce reaches desired thickness.
  7. Season both the stir-fry and cauliflower rice with salt, to taste.
  8. Serve the stir-fry over cauliflower rice and garnish with green onions and parsley.
