Welcome to Wednesday, y’all!  We are almost halfway through the work week, which makes me more and more excited for the upcoming weekend.  I have a chiropractor appointment, full day of work, a walk, and blog work on my agenda for the day.  It’s probably safe to say that my day will likely fly by and Thursday will be here before I know it.  No complaints here!

Is anyone else shocked that Christmas is literally only like two weeks away?  Luckily, I have most of my Christmas shopping done, but I still have a few small things left to pick up.  Oh, and the wrapping?  Yeah, I haven’t even started that part.  Hopefully I get some wrapping motivation here soon.

Today isn’t just Wednesday or almost Christmas time, it also officially marks four months until my wedding.  Holy crap!  I feel like we have so much done, and yet have so many “little things” left to pull everything together.  I should probably get to working on that over the holiday break.

But until then… let’s take a look at a full day of my Paleo eats!

lemon water collagenMy Saturday morning started out just how I like ’em: warm, cozy, and lazy.  I enjoyed a slow hour of blog reading and TV watching while drinking a mug of warm water with collagen peptides, L-glutamine powder, and a few squeezes of lemon.  Warm water tastes so much better than cold when it is chilly outside.

ThorneAbout 30 minutes after my mug of water, I took a couple of GI-ENCAP capsules (and a few more throughout the day) with a full glass of water.  I have been using this supplement to try to help combat my acid reflux and help heal my gut.

beef stuffed sweet potatoAround an hour later, I ate the most delicious stuffed baked sweet potato.  I topped it off with grassfed ground beef and leek greens sautéed in coconut oil + spices, avocado, and fresh cilantro.  I also took a cod liver oil capsule and a digestive enzyme.

EPIC_barMy lunch was eaten on the go: my favorite bacon and pork EPIC bar, organic baby carrots, a granny smith apple, and another digestive enzyme.

Inka_plantain_chipsAnd because my lunch was not nearly filling enough, I snacked on a whole lot of these plantain chips later in the afternoon.  Seriously, once you start you cannot stop.

potato_parsnip_soupDinner was a modified version of Kristin’s Roasted Cauliflower and Potato Soup + a second cod liver oil capsule.  I doubled the recipe, replaced the EVOO with avocado oil, and used parsnips instead of potatoes since I am avoiding nightshades.  It was so delicious!  I highly recommend whipping up a big batch of this soup.  I’ve been eating the leftovers for breakfast this week.  Yes, soup is totally a breakfast food!

Prescript-AssistI ended my evening with a new-to-me probiotic and frozen berries with homemade coconut whip (no picture because I was too excited and forgot!).  It was the perfect ending to a relaxing weekend night.

    When I first tried plantain chips I was thrown off, because I thought they would be sweet like bananas. After eating more though I started to really like them and I didn't want to stop! I don't take supplements at the moment. I've spent a lot of money on supplements in the past and never really felt like I got the results I wanted.       I hear you. They can get SO expensive, so it is hard to continue buying them when you are not seeing the results you are wanting to see. And yay for plantain chips. I am glad they won you over!

    Hi, Hannah! I am a long-time follower of your blog, and have wanted to write this message for quite a while, with the sole intention of being helpful, and not judgmental. I too suffered from unimaginable joint pain, chronic, debilitating muscle spasms and pain during my restrictive eating days. It was so bad most days I just cried. I saw every doctor, tried every treatment from supplements to Botox injected into the rock-hard, spasming muscles, chiropractic, physical therapy, heat, you name it, I did it, with no relief. It wasn't unil I started eating more--WAY MORE--and not restricted did I get any relief. I can't say that all the pain is gone (I probably caused quite a bit of long term damage to my body), but the improvement is marked. I think you'll find that if you input your food intake into a calorie counter (which I frankly hate, but it might be a good exercise here), you'll find that you are eating far, far fewer--like HALF--of what your body needs to heal and properly function. Your intake is so low for a young women whose body needs nourishment to heal and thrive. I understand that you've imposed a ton of dietary restriction in an attempt to reclaim your healthy, but have you stepped back and considered that they may be counterproductive? I am asking from the perspective of experience, and empathy, and truly understanding the horror of the symptoms you describe. If you are 100% committed to AIP, perhaps make a concerted effort to consistently ensure you are properly feeding your body with enough energy to not only support your daily lifestyle, but heal the damage done which takes more than you might suspect (my doctor's recommendation was at minimum 2400 calories a day--minimum--and I was at a healthy weight and only moderately active). I wish you the best and a full recovery.

      Thank you so much for taking the time to leave such a detailed comment. I ALWAYS appreciate constructive ideas and thoughts to help improve my health. Even I must admit that this day was pretty awful as far as calories are concerned. But in all honesty, I just was. not. hungry. I have calculated my food intake in the past (to ensure I am eating enough), and I am almost always around 1800-1900 calories. Now that I am back up to a healthy weight and BMI, I have always assumed this was enough. And in fact, when I was gaining wait a year or so ago and was eating at least 2200 calories a day, I never felt any better. I suppose I could try upping my calorie intake again, but knowing my past experiences, I am not sure it would help. It also can be so hard to do when certain elimination diets are so restrictive... AKA I am getting bored with a lot of foods! :(

    That soup looks SO comforting and warming!! I'm a huge fan of pureed anything - "baby food texture" as my mom makes fun of me. I have a bunch of broccoli simmering in some vegetable stock as we speak. I'm going to make a simple pureed soup tonight!       That soup sounds amazing. I bet I would love it! Also, funny story, but I totally used to eat the fruit baby foods for a snack in junior high and high schools sometimes. I once admitted this to my now adult friends and they admitted they did the same thing!

    The best remedy for reflux I found during a bad attack was fresh kale leaves. I was desperate and had it in my fridge and I ate 5 leaves and got almost instant relief. It turns out the leaves are highly alkaline as well as packed with fiber and nutrients. I hope others out there will try this. I was amazed.
