What I Ate Wednesday: October 28, 2015

Holy caaaarap, it’s almost November!  This month has seriously flown by for me.  I chalk it up to moving, starting a new job, and lots of family and friend time.  I honestly haven’t had a whole lot of time to actually focus on the day of the week or the month we are in.  And though October has been fantastic in regards to its perfect fall weather, I have to admit that I am pretty excited that both November and December are on the horizon.  What can I say?  I am a bit holiday obsessed!

This past weekend, I spent quality time back home with my parents, puppy dogs, and Jeremy.  I also miraculously remembered to photograph everything I ate and drank throughout the day on Saturday… well, almost everything.

My morning started out with a warm mug of lemon water with collagen peptides.  I drank this while hanging out in a hot bath.  It was the perfect way to start a chill day!

WIAW breakfastAbout an hour later, I whipped up my current favorite weekend breakfast: one chicken and apple sausage with sauerkraut, baby carrots, and a ripe banana topped off with sunflower seed butter.  It is totally random, but beyond delicious.

WIAW lunchAfter breakfast, I made the hour and twenty-minute drive to my parents’ house.  Shortly after my arrival, I made a veggie-packed lunch.  I roasted a sliced organic yam in the oven with coconut oil and cinnamon.  Once it was crispy, I topped it off with more sunflower seed butter (I might be obsessed).  I served the yam fries with sautéed collard greens (in more coconut oil) and brussels sprouts.  Every now and then, I really love having a straight-up vegan meal even though I began eating meat again.

Trilogy kombuchaMy afternoon started out with about half of this bottle of Trilogy kombucha.  This is easily one of my favorite flavors.

WIAW apple chocolateI also ate an organic apple and a few squares of unsweetened chocolate.  Literally, this is straight up chocolate.  No added sugar, nothing.  If you are used to sweetened chocolate (I can’t remember the last time I had it), this may not be your jam 😉

WIAW dinnerJeremy and I decided to grill out one last time before the extra cold weather hits.  We grilled burgers and served them on lettuce buns with onions and avocado.  Alongside our burgers we ate roasted broccoli (Jeremy’s favorite veggie), sautéed kale (I made this for Jeremy for the first time a couple of weeks ago and he loves it!), and black seedless grapes.

Crispin ciderI also drank a Crispin extra-dry cider (my favorite) with my dinner.

smith and forge ciderWe capped out our night with a couple more adult beverages while watching How to Get Away with Murder.  Since I am keeping things grain-free, my only options are most ciders and wine.  I have been wanting to try the Smith and Forge cider for a while now, so I was excited to finally crack one open.  I did not love it as much as my Crispin (I like the not-so-sweet ciders), but I liked it a lot more than some of the others out there on the market.  I would definitely buy it again.

plantain chipsAnd what pairs better with cider than plantain chips?  Okay, maybe not, but I love ’em!
