What I Ate Wednesday: October 28, 2015

in Other

Holy caaaarap, it’s almost November!  This month has seriously flown by for me.  I chalk it up to moving, starting a new job, and lots of family and friend time.  I honestly haven’t had a whole lot of time to actually focus on the day of the week or the month we are in.  And though October has been fantastic in regards to its perfect fall weather, I have to admit that I am pretty excited that both November and December are on the horizon.  What can I say?  I am a bit holiday obsessed!

This past weekend, I spent quality time back home with my parents, puppy dogs, and Jeremy.  I also miraculously remembered to photograph everything I ate and drank throughout the day on Saturday… well, almost everything.

What I Ate WednesdayWhat I Ate Wednesday: October 28, 2015

My morning started out with a warm mug of lemon water with collagen peptides.  I drank this while hanging out in a hot bath.  It was the perfect way to start a chill day!

WIAW breakfastAbout an hour later, I whipped up my current favorite weekend breakfast: one chicken and apple sausage with sauerkraut, baby carrots, and a ripe banana topped off with sunflower seed butter.  It is totally random, but beyond delicious.

WIAW lunchAfter breakfast, I made the hour and twenty-minute drive to my parents’ house.  Shortly after my arrival, I made a veggie-packed lunch.  I roasted a sliced organic yam in the oven with coconut oil and cinnamon.  Once it was crispy, I topped it off with more sunflower seed butter (I might be obsessed).  I served the yam fries with sautéed collard greens (in more coconut oil) and brussels sprouts.  Every now and then, I really love having a straight-up vegan meal even though I began eating meat again.

Trilogy kombuchaMy afternoon started out with about half of this bottle of Trilogy kombucha.  This is easily one of my favorite flavors.

WIAW apple chocolateI also ate an organic apple and a few squares of unsweetened chocolate.  Literally, this is straight up chocolate.  No added sugar, nothing.  If you are used to sweetened chocolate (I can’t remember the last time I had it), this may not be your jam 😉

WIAW dinnerJeremy and I decided to grill out one last time before the extra cold weather hits.  We grilled burgers and served them on lettuce buns with onions and avocado.  Alongside our burgers we ate roasted broccoli (Jeremy’s favorite veggie), sautéed kale (I made this for Jeremy for the first time a couple of weeks ago and he loves it!), and black seedless grapes.

Crispin ciderI also drank a Crispin extra-dry cider (my favorite) with my dinner.

smith and forge ciderWe capped out our night with a couple more adult beverages while watching How to Get Away with Murder.  Since I am keeping things grain-free, my only options are most ciders and wine.  I have been wanting to try the Smith and Forge cider for a while now, so I was excited to finally crack one open.  I did not love it as much as my Crispin (I like the not-so-sweet ciders), but I liked it a lot more than some of the others out there on the market.  I would definitely buy it again.

plantain chipsAnd what pairs better with cider than plantain chips?  Okay, maybe not, but I love ’em!

That wraps up my mostly Paleo day of eats.

I like the Smith and Forge and find it more crisp than sweet. Love to try the crispin. However it's never as good as beer :( Have you tried Omission lager? Andrea @ Pencils and Pancakes recently posted...Tips to get you through a food challengeMy Profile

I have tried Omission and I really like it. Unfortunately, since I am grain-free right now that is a no-go :(

I am loving the chicken apple sausage lately too. I'm planning to do a big hash of that, sweet potatoes/yams, kale, and other good stuff for a meal batch next week! Alyssa @ renaissancerunnergirl recently posted...WIAW #29: First Week at WorkMy Profile

That sounds like perfection! That is my favorite kind of meal prepping. Those sausages are amazing in a hash!

That breakast may be random, but oh my gosh it sounds amazing! I've just recently got on a sauerkraut (and sausage) kick. For something I didn't even think I liked, I am loving it! Somehow, the thought of combining this with banana and sun butter is just perfect. Hmm. Love WIAWs for this type of inspiration. I used to HATE sauerkraut, so it is so funny to me that I LOVE it! And yes... the banana/sun butter combo is bomb.

That's the kinda chocolate that's....BEST! So real, bitter, and like...chocolate <3 Haha!

I love chicken sausage (we have a favorite spinach and feta variety), but I really love a veggie plate! I don't know if a veggie plate would cut it for the husband, but I definitely make it when it is just me! And now I really want a hot bath! I am so lucky that my fiance really loves veggies too and isn't a very picky eater... but I think he likes it better that I am eating meat again ;)

I love that Smith and Forge basically tastes like apple juice... unfortunately, that can be a BIT dangerous.
    • ClnEatingVegGrl October 28, 2015, 1:47 pm
SUPER dangerous. It went down way too smoothly and quickly!

Yes, they are definitely NOT sweet. Which I think is why I like them as an alternative to tortilla chips. BUT... I have seen a sweet version in stores before. So maybe you would like those!
  • Monica October 28, 2015, 1:32 pm
Your brussels sprouts look so good and really tender and "creamy"--how do you prepare them? Mine always get too dried out. Maybe steaming?
    • ClnEatingVegGrl October 28, 2015, 1:51 pm
These were actually frozen brussels sprouts that I just steamed for a few minutes in the microwave... easy peasy!
  • Morgan @ Morgan Manages Mommyhood October 28, 2015, 2:22 pm
How do you eat such a small amount of sauerkraut with your breakfast! Any time I eat sauerkraut I'm like, oh, three cups sounds like a decent serving size to me. Is that weird? ahahha Your dinner looks amazing as well! Morgan @ Morgan Manages Mommyhood recently posted...What I Ate Wednesday: Avocados on the CheapMy Profile
