A Whole 30 What I Ate Wednesday: July 22, 2015

We made it to Wednesday.  Woot woot!

Like every other Wednesday here on CEVG, I am sharing a full day of my eats in honor of What I Ate Wednesday.  This particular day of eats is from this past Sunday when my mom and I were in Des Moines going wedding dress shopping.  I am happy to say that I ate delicious Whole 30-compliant food… and found the dress!

WIAW breakfastSince the continental breakfast at the hotel was pretty non-Whole 30ish, I ate what I packed for breakfast: a banana with almond butter and a turkey, almond, and cranberry Epic bar.  I have heard amazing things about these bars and normally love sweet and savory, but I was not necessarily digging this bar.  I guess I prefer Larabars or Kit’s Organic Fruit + Nuts bars.  I might try some of the other flavors, but for now, I like to keep meat in its more “natural” form.

WIAW Chipotle carnitasAfter our first bridal store stop, I was lucky to find a Chipotle that carried carnitas.  I ordered a carnitas salad and topped it with the tomatillo salsa and plenty of guac.  I loved every single bite of this salad, and it was just what I needed to fuel me through another dress appointment.

WIAW snackIt only took us two stores to find the dress (back at the very first store), so I headed home to Omaha a bit sooner than I had originally planned.  I snacked on an apple and lightly salted almonds throughout the drive.  I also always make sure to have my Camelbak water bottle with me whenever I am traveling in an effort to stay hydrated.

wiaw chicken burger dinnerThank goodness for Instagram!  I was apparently so hungry on Sunday night that I forgot to take a picture of my dinner on my DSLR.  An iPhone picture will have to do!  I made a chile lime chicken burger from Trader Joe’s (so good), baked sweet potato fries dipped in mustard, and kale sautéed in coconut oil.  This is absolutely one of my favorite meals right now.

WIAW snack 2I finished the evening off with a small dish of plantain chips dipped in guacamole.  These individual guacamole packs from Wholly Guacamole are amazing.  I love that I never ever have to eat brown guacamole since every container is perfect for one serving <–totally not sponsored, I just love them!

I hope everyone has a wonderful Wednesday.  Jeremy gets in town this afternoon and will be here until Sunday.  To say I am excited would be an understatement.

    I picked up one of the Epic bars yesterday in the store to check it out.When I turned it around I realized it was literally just meat! For some reason that really surprised me! I don't think I'm ready to have meat for snacks, haha. Congrats on the dress! I know that's a great feeling!

      It is strange, right? Maybe they are an acquired taste, but I definitely was not digging it.

    Dude, yes! Those chili lime burgers are the bomb! I just finished my box :/ I need to get to TJs sometime this summer to stock up (we don't have one near me). I also love the mahi mahi burgers they have!

    Love your whole30 eats! I make my own plantain chips at least once per week and yes, they are flipping amazing with guac! My husband and I eat taco salads covered in these chips with guac and lots of chipotle spiced ground meat and some salsa.       I have never made my own plantain chips, but I REALLY want to! Do you bake yours or dehydrate them?

        I normally fry them in coconut oil in my cast iron, drain on paper towel and then sprinkle with salt.     I have tried plantain chips once and I automatically fell in love! It is like a combination of chips but slightly bananaey and they taste so good! How awesome that there was a nearby chipotle, I love how they let you have paleo friendly option by just subbing out the beans, rice, and cheese!     I'm so intrigued by your new diet! How do you like it? How are things going? I'm all for doing what's best for you. My husband started eating meat again because he felt like it made him feel better. I still stick to plant-based but I love learning about other people's experiences!!! I hope you are doing well :)

      Honestly... it's still a bit WEIRD, but I am enjoying re-learning how to cook things like meat ;) I'm just hoping I start seeing some positive health results and start feeling better. My fingers are crossed! Also, thank you for being so understanding. Not everyone is, but it is nice to see some positivity!

    OMG Chipotle was my saving grace during Whole30! I tried making sweet potato fries tonight and I would have liked them to be more crispy. Any tips?       I think the main things for making them crispier are to cook them longer than you think you should, and then I have always heard that cooking them on a cooling/baking rack really helps. I just need to buy one so that I can test it out ;)
