Do you ever feel like the week drags by when you have something to look forward to on the weekend?  Don’t get me wrong, I am always looking forward to Friday evening.  But I especially love when I am going somewhere or have something special planned.  The downside of fun weekend plans is that the excitement of it all always seems to make the weekend take forever to get here.  I guess good things come to those who wait?  Or at least that is what I am going to keep on telling myself.

So, Wednesday, I will do my best to like you and accept the fact that you are not Friday.  And one of the things that I like about you the most is that you are the “unofficial” day for talking about a full day of eats.  Check out my day of eats below, and then head on over to Peas and Crayons for other bloggers’ What I Ate Wednesday posts!

savory_breakfast_sandwichThis past Saturday began way earlier than normal.  The higher education institution that I work for had their annual summer Commencement ceremony, and I was a volunteer.  The ceremony location was 25 minutes away from where I live and I had to arrive by 6:45 a.m., so I opted for breakfast on the go.  I toasted up two slices of gluten-free toast.  I topped one with guacamole and strawberry jam <– I love that sweet and savory combo.  I topped the other slice with guacamole, half of a slice of Field Roast vegan cheese, and a fried egg.  This was seriously delicious and surprisingly easy to eat in the car.

appleI also packed an apple to snack on mid-morning since I knew I would not arrive home until around noon.

burger_mashed_sweet_potatoesLunch was leftovers from a few days before: a grass-fed beef burger topped with half of a slice of Field Roast vegan cheese, onions, tomatoes, and mustard on a lettuce “bun.”  I served it alongside frozen grapes and my mashed sweet potatoes and apples.

smoothie_vital_proteins_collagenAround 3:00 in the afternoon, my hunger hit again.  I whipped up a green smoothie with unsweetened almond milk, water, chocolate Vega One, frozen banana, frozen blueberries, frozen zucchini, and frozen spinach.  I also added in some collagen peptides for the first time, and was super pleased that I did not even taste them.  I have been trying anything and everything for my chronic joint and muscle pain, and I’m hoping this product helps!

veggie_grain_free_pizzaDinner was super easy and delish!  I made my grain-free pizza crust for one and topped it with pizza sauce, kale, peppers, onions, mushrooms, pineapple, sauerkraut, and vegan cheese <– can you tell I’m trying to use it up before I try soy-free?  I sometimes forget how delicious a simple veggie-packed pizza can be.  I need to make this more often.

homemade_popcornI ended my night with some homemade stove top popcorn.  I’m going to be sharing my method for making it next week, hence the reason why this picture looks 10 times better than any other popcorn picture I have ever posted!

skinnygirl_margaritaAnd what goes better with popcorn than a margarita?  I blended up some Skinnygirl margarita and ice in my Vitamix for a perfectly slushy ‘rita.  It was the best night-cap!

      Yes, I can only imagine what a mess that would be. I made sure to break the yolks while I was frying mine up for that exact reason!

      Haha! I wouldn't necessarily say it is "volunteering." It's more like "highly recommended".. if you get what I'm saying! And somehow I have mastered eating breakfast in the car. Cereal can be pretty challenging, but I've gotten pretty good at that ;)

    That popcorn sounds so good :) I honestly don't ever eat my breakfasts on the go. I'd say if I had to, it would just be a bagel.       I hear you! The best breakfasts tend to be messy and not easily eaten anywhere other than at the table. I made sure to break the yolk in my egg on this particular morning or it would have been EXTRA messy!

    Oh I love me some Skinnygirl! I can say that it's literally been YEARS since I've had one though - geesh! And your runny eggs always make me hungry - yours are PERFECT! I've been making them every single morning lately. Mine are getting better, but they definitely aren't at Hannah level ;) You must make them like my mom - with a lid?       Yes... the lid is a MUST! I'm planning on writing up a "how to" post here soon since people seem to be quite interested in my egg cooking style ;) And I had not had a Skinnygirl margarita in YEARS either until I had that one. When you are no longer nursing we will have to have a Skinnygirl night!

    That all looks good - per usual when I come here. ;) I'm hating how the price of eggs is going up (first picture) I was getting eggs from my co-worker that has free range chickens.       Oh trust me, it wasn't runny! I broke the yolk and cooked it just long enough so that it wouldn't be. Because yes... that would have been a nightmare. It was kind of messy just as it was anyways ;)

    Your egg and avocado with jam combo looks delish! Thanks for the idea. Hope your joint pain goes away soon...can't be fun. Love to see how a fellow egg lover cooks theirs. Never a wrong way but learning something new is always good! Keep up the terrific work girl

      Haha, crazy right? I made sure the egg yolk was cooked through so that it wasn't messy and I ate it open-faced, which also made it easier to eat. It still probably was not the smartest idea I have ever had ;)

      Both are SO delicious! Now that I have been trying out mostly grain-free, I have not had either in awhile. I miss them :(

    I feel like I'm looking at the rainbow - so many colors eaten in one day. All of which looks delicious! Favorite on the go meal would be an egg sandwich of some sort or even oats in a pb jar.

      Breakfast bakes are SO good! I even have a few floating around here on the blog. I used to make up a big pan on Sundays and eat them throughout the week. They make meal prepping fun!

    Hannah, I've been meaning to ask you about the frozen zucchini in your smoothies. Is this raw or steamed before freezing. Want to give it a go as yours always look so good.

      It is raw! I just slice it up and throw it in the freezer. It works perfectly!
