So it may feel like Tuesday, but I am excited to tell you that it is not!  It is Wednesday!  That’s right, veggie-loving friends.  We already made it to hump-day and it feels like the week just started.  This girl is not complaining.

Like every other Wednesday, I am linking up with Jenn from Peas and Crayons for What I Ate Wednesday.  Let’s take a peek into a day of my weekend eats.

breakfast_sandwichMy breakfast on Saturday morning did not exactly go as planned.  Remember when I purchased that super expensive coconut flour paleo bread?  I was pumped to try it out in an egg and vegan cheese breakfast sandwich to fuel me for my Pilates Fusion class that morning.  Except it tasted downright awful.  Seriously.  It was so bad that I had to spit it out.  So instead, I ate the fried egg and cheese- sans bread.

apple_pie_larabarNaturally, one egg and a slice of vegan cheese was not going to be enough to keep me full for the next two and a half hours.  And it was most definitely not enough to fuel me through a workout.  So I warmed up an apple pie Larabar and topped it off with a bit of crunchy almond butter.  Ahh, much better!

plantain_nachosMy workout was at 9:45.  After the 25 minute drive home and some blog work, I sat down to a delicious plate of plantain nachos for lunch.  Maybe I’ll write up a whole post dedicated to these nachos.  They deserve it.

green_smoothieAfter a rare afternoon nap, my stomach was growling again.  I whipped up a green smoothie with unsweetened vanilla almond milk, chocolate Vega One (<– affiliate link), almond butter, frozen banana, frozen blueberries, frozen zucchini, and frozen spinach.  It was super cold and super filling.

salad WIAWDinner was eaten around 6:30 and was a humongous salad.  In the mix was Romaine lettuce, carrots, orange peppers, radishes, green onions, cucumbers, raisins, crumbled grain-free tortilla chips, and homemade ranch dressing.  I am crushing on salads big-time lately, and I am not mad about it.

vegan_raspberry_cheezcakeI finished my night off with a sweet treat: a slice of Raspberry Tofu Cheezcake from Veestro.  Apparently I let it thaw out in the fridge a bit too long because it didn’t exactly hold its shape.  I could have cared less, though.  It was deeeelicious!  Seriously, you guys, you would never ever guess this was made with tofu.  I am so sad all of my cheezcake treats from Veestro are gone now.

While this particular day didn’t exactly start out on a high note on the food front, I cannot complain about how the rest of the day went.  You win some, you lose some.  Thank goodness most of my food choices were winners.

      YES! Salty (not sweet) plantains are the best! You should definitely give the nachos a try!

      It is crazy what you can do with tofu! It made the cheesecake super duper creamy, which I LOVED!

    I will have to use your plantain nachos for inspiration. I bought a bag of plantain chips from Trader Joe's thinking they would be slightly sweet and was disappointed, so they have been sitting in my pantry ever since because I didn't know what to do with them.

      Oh my goodness, I LOVE that they are salty and not sweet. But you definitely need a more savory way to eat them. If all else fails, dip them in salsa and guac. I promise it is good!

    Such a bummer about the bread!!! I hate when I get excited to try something new and it turns out to be a flop :( At least the rest of your meals sound awesome!

    Ahahahaha! I literally Loled about the bread :P I never tried it, but I always saw it in health food stores and at Whole Foods and ALMOST bought it so many times!

      Isn't it great how smart our bodies are? I almost inevitably start craving salads about halfway through my vacations. It's like my body's way of saying... "wait, where is the good stuff?" ;)

    Love those larbars and so useful to have one tucked in your bag just in case hunger strikes. All the other food looks delish. I was introduced to plantain chips in NY at Empanada Mamas and loved them with my guacamole. I wish more places would give that option.     I always am astonished at how quickly the shorter weeks fly by. I am right there with ya, feeling like it is Tuesday. I love being reminded that we are farther along than what I previously thought. What a bummer your paleo bread turned out to be less-than pleasant! However, your lunch looks scrumptious.       You definitely need to give both a try. I have a feeling you will like them! Larabars are good, but they are amazing when they taste like they came right out of the oven!

    LOL, yeah, sometimes those bread substitutes just don't do the trick. My food obsession recently has been breakfast burrito bowls for breakfast - eggs, avo, black beans, quinoa/brown rice, and salsa!
