I hope I am not jinxing myself by saying this, but this week is actually going by fairly quickly so far.  Maybe it is because I had a short work day on Monday?  Or maybe it is because I am so excited for the three-day weekend coming up soon?  Either way, I’ll take it!

I’ll also take some seriously delicious eats.  Today’s What I Ate Wednesday post is taking us allll the way back to my eats from last Thursday.  I’m not sure what it was about that particular day, but for whatever reason I felt the need to capture my food.

green smoothieMy morning started out like every other weekday morning with a green smoothie made in my new favorite kitchen appliance: my Vitamix!  In the mix was unsweetened vanilla almond milk, cold water, almond butter, chocolate Vega One, frozen banana, frozen zucchini, and tons of frozen spinach (<– affiliate links).  It was as tasty as ever!

chocolate chia seed puddingI took my smoothie to go on the way to work and also packed a second breakfast for the day.  I can never make it through the work morning with just one breakfast.  I made chocolate chia seed pudding, which I topped with sunflower seed butter at work.  I’m working on perfecting this recipe and then I will share it with you here on the blog.

Paleo Pizza PieMy lunch did not look nearly this pretty, as it was in a glass Pyrex container, so I thought I would share the more appetizing photo with you!  This meal was to do for.  I’ll be talking about it more in an upcoming Friday Foodie Favorites post, but let’s just say it involves spaghetti squash, Italian chicken sausage, and spaghetti sauce.  I actually even topped mine with a bit of guac when I was at work since guac makes everything taste a bazillion times more delicious.

Mexican egg saladDinner was another crazy good meal.  I topped a bed of Romaine lettuce with salsa, scrambled eggs, and tomatoes.  For some reason, I have been loving scrambled eggs on my salads lately.  I also served my salad alongside some homemade grain-free tortilla “chips.”  This is another recipe that I am working on and hope to share with all of you soon.

plantain chips and guacThe final thing I ate last Thursday was my new favorite snack: plantain chips dipped in guacamole.  You guys, this combination is ridiculously good.  Even if you are not trying to avoid grains, I highly recommend that you give it a try.
