And just like that, Wednesday is here and we are halfway through the month of April.  I am itching for some May weather, and I have so many things to look forward to in the month of June.  Basically, I would not be too upset if the rest of April sped on by.

But until then, let’s talk about food!  I’m linking up for What I Ate Wednesday today to share a day of my eats.  Here is everything that I ate this past Saturday.

WIAW supplementsMy day started out with my usual morning routine.  I took my acid reflux medication, a calcium supplement, olive leaf extract, and primrose oil with tons of water.  I then treated myself to something sweet to get the icky taste out of my mouth: a dried prune!  Yes, I think prunes are a treat!

WIAW acai bowlAbout an hour later, I sat down to a homemade acai bowl topped with frozen berries and gluten-free quinoa and chia cereal.  It was delicious, as always.

3c1k Pea and Pesto Zoodles 2Lunch was the results of the latest Three Cooks One Kitchen cooking adventure.  I’ll be sharing the recipe tomorrow, but I’ll give you some hints.  It involves two kinds of peas, pesto, and zucchini noodles.

wiaw green smoothieAround 3:30 in the afternoon, I drank a green smoothie.  In the mix was unsweetened vanilla almond milk, BodyBio oil, vanilla Vega One, frozen banana, frozen zucchini, and tons of fresh spinach.  I am finally able to drink these without having to cover up in a blanket!

wiaw blue diamond almondsA couple of hours later, I snacked on a handful of these honey roasted cinnamon almonds from Blue Diamond.  Holy cow, these are good.  They are a must buy!  But be sure to only grab a handful, or you might eat the whole container in one sitting 😉

wiaw supplementsI pre-gamed for dinner with a handful of pills.  I have been taking quite a few vitamins and supplements lately, and splitting them up between the morning and the evening makes taking them slightly less daunting and annoying.  Here we have glutathione, a probiotic, Vitamin D, primrose oil, a small dose of thyroid medication, and more olive leaf extract.

wiaw quinoa veggie fried riceDinner was a super delicious quinoa “fried” rice chock full of delicious veggies.  I’ll share more on this in a future Friday Foodie Favorites post.

wiaw cacao banana bread muffinI finished off the evening with my Single-Serve Cacao Nib Banana Bread Muffin.  Boy did it satisfy every single one of my sweet cravings!

    I can't believe April is already halfway through! We're taking an actual vacation (!!) at the end of this month so I can't wait for that to arrive!!     Not to be extra nosy, but does your thyroid medication not need to be taken on an empty stomach? I have to take mine first thing in the morning and then wait TWO HOURS to eat. I normally only make it an hour, but I say that rounds up. Waayyy too hungry in the mornings to wait 2 hours for anything.       That's a great question! I actually had to go look at my bottle when I first read this to be sure I wasn't taking it wrong. It does not specify anything about it needing to be taken at a certain time or a with/without food. It just says... take one daily!

      That is exactly why I love the single-serves!! Otherwise I would be in the same ballpark as you ;) You could also try freezing some when you make a batch. I bet that would help!

    Do you use a pill box? I take 5 pills a day (but was taking 7 for awhile) and a pill box was life changing. I could count them out on Sunday and not have to think about it for a week (or try to figure out whether I had taken my pills or not).

      Haha... I TRIED doing that.. but most of these are monstrous pills and they don't fit :( Do they make jumbo pill boxes? ;) I actually have a list on my fridge of everything I need to take (and when) in order to keep it all straight. I feel like I'm 80!

    This month is flying by and I can't wait for some fun in the sun, soon soon soon. I'm going to have to try that single serving muffin. It was interesting to see that you split up your supplements, I might start doing that.

      I HAVE to do that in order to mentally get it done ;) It just seems so daunting staring at a HUGE handful of supplements. Splitting them up works really well for me. I hope it does for you too!

    Blue diamond almonds are THE best. For a longgg time we couldn't get any of them in Australia so I'd have Jesse bring them with him whenever he'd come to Aus. Now we have a few flavours (honey roasted, salted and jalapeno) but I am hoping they introduce all of the different flavours as they're way too good to miss out on!
