WIAW: November 12, 2014

Things are getting old school here in Clean Eating Veggie Girl land today.  For the past several months I have been sharing my “recent eats” each Wednesday for What I Ate Wednesday.  Today, however, I am taking things back to when I first started participating in WIAW and I am showing you a full day of eats.  I somehow miraculously remembered to take a picture of everything that I ate in a day, so I figured “why not?!”

But before we get to the food, last Wednesday I mentioned that I already had my Christmas decorations up.  So I feel that it is only right that I share a picture of my pretty little Christmas tree.  Feel free to roll your eyes at this point in the post.

wiaw smoothieMy daily breakfast #1: a green smoothie!  In the smoothie was unsweetened vanilla almond milk, chocolate Vega smoothie protein powder, frozen banana, frozen zucchini, and tons of fresh spinach.

wiaw cerealMy second breakfast was a giant bowl of cereal.  This is the exact same breakfast that I ate last Wednesday.  I was on a cereal kick over the Summer, stopped eating it for awhile, and now I am loving on it again.  My mixed bowl of cereal included Kashi Go Lean, 365 Whole Wheat Flakes, puffed kamut, and Cascadian Farm’s Chocolate O’s.  I always top my cereal off with unsweetened vanilla almond milk, and I always eat  A LOT of cereal in order for it to stick with me for awhile.  Just ask Jeremy.  I made him a bowl last weekend and he said it “was the biggest bowl of cereal he had ever eaten.”

wiaw pruneI always randomly snack on dried prunes throughout the day.  I usually end up eating two or three whenever a sweet craving hits.

wiaw runzaMy lunch was made up of two things that I pulled out of the freezer: a leftover Vegetarian Runza (dipped in sundried tomato ketchup) and a side of peas.  This lunch really hit the spot!

wiaw appleA couple hours later I was hungry again, so I snacked on a sliced apple dipped in a spicy hummus.  I know it may sound strange, but I love the sweet and savory/spicy combination so I thought it was delicious.  Do not knock it until you try it!

wiaw balance bareI was having a haaangry afternoon, so I went in for a second snack.  I chose a new-to-me Balance Bare bar in the Sweet & Spicy Nut flavor (again with the sweet and spicy/savory combo).  I tend to be super picky when it comes to bars and only like ones that have simple ingredient lists, so I was pleased with the fact that I could actually pronounce every ingredient that was in this bar (nuts, spices, coconut oil, etc.).  It tasted pretty darn delicious, too!  This bar has officially been added to my list of Hannah-approved nutrition bars- for both healthiness and taste.

wiaw balance barThe Sweet & Spicy nut is not the only flavor that these bars are made in.  There is also a Sea Salt Caramel Nut and a Mixed Berry Nut.  I have since tried the Mixed Berry and, it too, is spot on.  Both the Sweet & Spicy Nut and the Mixed Berry Nut bars are vegan, which I loved.  Since I try to keep my nutrition bars dairy-free, I passed along the Sea Salt Caramel Nut bar to Jeremy when he was visiting a couple weekends back.  I actually give him one of each bar and he said that the Sea Salt Caramel Nut was his favorite flavor.  So there you go.  If you are into dairy then it sounds like that is a great way to go.  Talk about a healthy alternative to your traditional candy bar!

wiawDinner was one of my all-time favorite ways to use spaghetti squash: Robyn’s Spaghetti Squash Pad Thai.  I have made this countless times and talked about it here on CEVG on several occasions.  I feel like maybe I should be a spokeperson for this recipe 😉

wiaw popcorn!I have a lot of favorite popcorns, but this is definitely one of the best!  I finished off the night with a big ‘ole bowl of this vegan white “cheddar” popcorn.  It was the perfect way to end the night!

    Well, I was all ready to tell you apples and peanut butter are a favorite around here, but you threw me with the hummus. We love hummus too, but we have never tried it with apples.

    I can't wait to decorate the house and put up the tree when I get home! Christmas couldn't come earlier this year! Yes! Your a "cereal-mixer" like me! I just ate a huge bowl with rice chex, vegan cacao brown rice crisps, and mesa sunrise! Gotta load it in!

    I usually drink Shakeology each day after my workout, but recently bought some single Vega packets. Your mix sounds great. I also need to put those bars on my list.       They really are delicious and I love that they do not contain a bunch of extra unnecessary crap. You'll have to try them and let me know what your favorite flavor is!

      You totally could have put your tree up before and I would not have minded ONE BIT!! ;) And yay for mixed cereals! I will agree though that you have to eat a lot of cereal in order to go through it quick enough that it doesn't get stale :/

    I am a big fan of the traditional Balance bars so I'm very anxious to try the new Balance Bares. All three flavors sound yummy.

    I was just telling Becky yesterday how I needed to make the runzas she mentioned. I don't think i'd ever heard of them before. I love the idea of pairing it with sweet peas. Only one of the best sides :)

      Trust me, I had never heard of them either until I moved to Nebraska. I am glad I made a veg version, though, because they are delish! And peas are a definite must, of course!

    All that food looks so yummy! I would love to be a vegetarian. To get my husband on board is different story. I only eat meat a couple times a week, but would rather not. These are some really great options! :)

      I am so lucky that my boyfriend will literally eat anything that I cook. I don't think I could ever get him to give up meat fully, though. Good for you for limiting your meat intake. I'm sure your body appreciates that :)

      I actually still have 2 left in my freezer.. but they are the first two I made and aren't stuffed as much. I kept avoiding picking those ones out of the bag because I wanted the bigger ones. Maybe I'll have to eat both of the small ones at once ;)

      I really like the Vega powders! The chocolate and vanilla are super good. I'm not a huge fan of the fruit flavors, though.

    Your Christmas tree is so cute!! I had a little one like that for years when I lived in my apartment. Now my mom uses it in hers :) My tree is 10 feet tall now hahah.     I love tinier Christmas trees. Living in a studio I appreciate smaller things. I had a really amazing bowl of soup yesterday.     Aww! Your tree is precious! I get slightly irritated when Christmas comes too early, but my frustrations are aimed at retailers. I have friends who wait, on the edge of their seats, for Halloween, only because they start Christmas music/decorating/etc. on November 1st! I just let it go. Ha! I'm game for Christmas the day after Thanksgiving. I tend to wait a little while before getting a tree. I've found that I can get a serious discount on a tree around December 15th. A 6 ft tree for $17? Yes please. And since it's super dried out, it smells uh-maaaazing! This is last weeks WIAW, but the best thing I ate yesterday was a warm spinach, edamame salad topped with a sweet potato, covered in a fire roasted tomato salsa. Lunch.       It sounds like you are very smart when it comes to buying a tree. I love a good deal, too! And yes... the prunes are SO random. But I am seriously hooked on them. They were perfect when a sweets craving hits!
