WIAW: August 13, 2014 (Recent Eats)

This is going to be an introduction-less post because, to be quite honest, I am still trying to catch up from my busy weekend.  You are mostly interested in the pictures of my eats anyways, right?  Sticking with the theme I have had going for about a month or so, here is a round-up of some of my favorite recent eats (not just from one day).

wiaw 3I think that if I had to pick my favorite fruits, both red grapes and cantaloupe would make my top five.  I never used to really care for melon much, but now I am obsessed!

wiawI made another farro dish for dinner (which I will post more about later) and served it on a toasted English muffin.  I ate steamed brussel sprouts on the side… another current obsession of mine.

wiaw 2This popcorn is so, SO good.  Do yourself a favor and buy a bag.

wiaw 5More brussel sprouts!  I paired them alongside a red potato and an apple and sage Field Roast vegan sausage (dipped in mustard).

wiaw 4Blue corn tortilla chips with two kinds of salsa.  This is definitely one of my favorite nighttime snacks lately.  I remember a few years ago when this snack would make an appearance nearly every day.  I am beginning to remember why.

des moines 15A cookie that I ate at the Iowa Craft Beer Tent at the Iowa State Fair this past weekend.  This is proof of the generosity of Iowans.  Some random strangers bought a big bucket of them and were sharing with those around them.  I couldn’t say no.

wiaw 2I made my own overnight oats in a jar with cocoa overnight oats, maple almond butter, and frozen berries.

wiaw 5Lunches a couple of days this week have been curry egg salad on lightly salted rice cakes.  I love egg salad (made with Vegenaise)!

wiawMore maple almond butter… on a baked sweet potato!  This nighttime snack keeps my tummy full all night long.

wiaw 7I made my 3-Ingredient Quinoa and Vegetable Stir-Fry, except this time it was four ingredients.  I added lentils into the mix because the frozen veggies that I used did not have any beans in them.  I wanted the extra protein.  Even with four ingredients, this was crazy easy to throw together.

    Josh is all about the brussels sprouts lately, too. It's crazy, because it's literally the only vegetable on the planet that he'll request to eat over and over -- and I'm just "eh" about it (unless it's cooked with maple syrup and bourbon!)       That is SO funny that he loves them so much since most people cannot stand them! I have never cooked them in maple syrup, but I imagine that it is amazing! I'll have to try that out.

    Jeff and I tried to get into brussel sprouts and it just couldn't happen, haha We are HUGE fans of sweet potatoes around here though. Have you seen those potato pocket things for microwaving them? They work like a charm! It makes preparing sweet potatoes SO fast!       Aww, bummer about the brussel sprouts! :( Apparently cooking them in maple syrup and bourbon (see the comment above) is delicious? Maybe you should try that! And I always cheat and make my potatoes in the microwave to save time. I had no idea that potato pocket things existed, though. I'll definitely have to look into that.

    That Boom Chicka Pop stuff is AMAZING! The white cheddar kind is my favorite. I've never tried the kettle corn style one so I'll definitely keep an eye open for it next time!

    Grapes are definitely my go to snack when I am craving some fruit...weirdly, the green ones dipped in PB are really good :)

    Your egg salad with vegenaise jumped out at me. You must be a girl after my own heart. I put that ish on everything. Yes, even eggs and people are like what's the point? And I'm like mayonaise is kind of gross but this stuff is like manna from heaven. It doesnt even taste like mayo. Do you agree? I think they should rename it to "creamy deliciousness" because people who dislike mayo need to try it. OK maybe you are probably not as obsessed as me, but still I had to comment. (0;

      Ohhh no, I am most definitely obsessed!! Vegenaise is SO amazing. I was never a fan of regular mayo, but I love this stuff! It is definitely delicious on so many things.

    Sweet potatoes are the BEST! Love that snack and can't complain with a bit of nut butter :)

    I have never thought of putting almond butter on a sweet potato! They're two of my favorite things though so I'm definitely going to have to try that combo out! Iowans are the friendliest! My grandparents have a farm in Iowa so I go out to visit often. I love how every time you pass someone in a car they lift their hand in a friendly greeting!

      It is such a great combo! You definitely need to give it a try. And yes, gotta love Iowans. I might be slightly biased though ;)
