Happy Wednesday and What I Ate Wednesday!

You have already been seeing a lot of my recent eats lately with my Colorado recaps, but I still had some extras leftover on my camera from before the trip and the few days after.  So without further ado, check out some of my recent eats!

WIAW generalWIAW: June 25, 2014 (Recent Eats)

recent eatsNow that it is almost Summer, I have been craving salads like crazy.  I suppose I cannot be upset about that!  This side salad contained greens, tomatoes, pineapple, red onions, and Hilary’s new vegan ranch chia dressing <– it is SO good!

recent eats 2Accompanying my salad was a veggie wrap with an Ezekiel tortilla, hummus, greens, tomatoes, red peppers, onions, and sauerkraut.  I am still majorly loving on sauerkraut.

ruby tuesday recent eatsIs there anything better than the salad bar from Ruby Tuesday?  It is seriously my favorite salad bar from a chain restaurant.

recent eatsI ate a Summertime Hoppin’ John salad which I ate for several dinners and lunches.  More on this in a future Friday Foodie Favorites post!

recent eats 2There seems to be a trend here.  I am slightly obsessed with all fresh produce.  This particular dinner was an everything bagel topped with hummus, greens, onions, tomatoes, and sea salt.  I ate a dish of pineapple on the side.

recent eatsRemember what I said on Monday?  This is “people” food (look at the ingredients list!) that just happens to be something that babies can eat 😉  They are also a super easy and portable snack.

recent eatsMy favorite recent breakfast: Toasted Ezekiel bread topped with crunchy peanut butter and apple slices.

Subway recent eatsTravel lunch on the way home from vacation: A veggie sub and Pop Chips!

And there you have it!  Lots of quick, easy, delicious, and veggie-field meals and snacks.  You cannot beat that!  Have a great Wednesday!

      Everything was really delicious... I am SO glad that Summer is back because I am actually CRAVING a lot more fresh produce and salads!

    We seriously almost went to Ruby Tuesday yesterday. The salad bar is jammin and I love that they actually have an option to order just a series of veggie side dishes (which is what I do at a lot of restaurants and get weird looks for it!)

      Their salad bar is definitely one of the best! They have SO many toppings and I adore their croutons! And I hear you on the veggie side option. I'm a major Texas Roadhouse lover (mostly for their rolls) but they are obviously very meat-focused. I always order the veggie side dishes there.

    I totally agree- as soon as summer hits I go on fresh veggie over drive - oh and fresh fruit (all the peaches please?) - looks great

      Yes!! Summer definitely means some of the BEST veggie and fruits. I am ALLL about the melons and berries right now.

      It was a total spur of the moment decision when I saw it sitting in my fridge, but I LOVED it! It WILL be happening again soon.

      Subway is definitely one of the only "fast food" restaurants that I will visit. And yes... the baby food ;) I'm pretty sure my boyfriend thought I was a total weirdo haha!

    Big thanks for giving me some motivation & inspiration to bring back some green into my life. For some resaon these days, my meals have consisted of NO vegetables & mostly carbs. However, I do believe your body will crave what it needs... BUT this girl wants some salads! Haha :)

    All of your veggies look amazing. Oh, and I'm SO glad I've found someone else that eats baby food. My local grocery store sells tons of portable baby food/baby snacks like that, and they're REALLY good. My mom think it's hilarious that I eat baby food, but veggies are for anyone at any age! xx

      That is definitely a GREAT point! Salads can be relatively cheap meals which is great when you are trying to be mindful of your food budget... which I tend to have a difficult time doing ;)

      I don't often add fruit to my salads, but when I saw the pineapple sitting in my fridge I figured it might work... turns out it is delicious!!
